I did a quick skim of the ingredient list and didn't see any red flags, but you'd want to check it carefully and omit/substitute anything non-W30. For the sauce, you'd just need to be sure to get a complaint Dijon mustard (made without wine). Whole Foods' 365 brand of organic Dijon mustard is compliant. I have made it a few times now and it even was the star of the show at our Easter dinner this year! Make sure you do make the salad with the left overs--excellent! This one is also yummy and quick to get in the oven-- http://paleoparents.com/2011/pork-roast/ I leave off the sauce but the roast is yummy all on its own! When they are on sale at Sam's for under $2/lb, I buy one or two whole loins and I'm set for ages. Here's a suggestion for the center-cut chops.
