Pork Loin

I've made this recipe before, and it was very good:  http://www.foodnetwork.com/recipes/ellie-krieger/herb-roasted-pork-loin-with-parsley-shallot-sauce-recipe/index.html.

 

I did a quick skim of the ingredient list and didn't see any red flags, but you'd want to check it carefully and omit/substitute anything non-W30.  I wouldn't stress it if you don't have all of the herbs - just use a combo that you like and/or have available.

The recipe looks fine. For the sauce, you'd just need to be sure to get a complaint Dijon mustard (made without wine).   Whole Foods' 365 brand of organic Dijon mustard is compliant.

There are a couple paleo recipes that I adore-- http://everydaypaleo.com/roasted-garlic-and-herb-crusted-pork-roast-two-ways/ -- this one is DIVINE! I have made it a few times now and it even was the star of the show at our Easter dinner this year! Make sure you do make the salad with the left overs--excellent! 

 

This one is also yummy and quick to get in the oven-- http://paleoparents.com/2011/pork-roast/ I leave off the sauce but the roast is yummy all on its own!

Did you buy a whole pork loin?  I cut a roast off each end and slice the rest into nice thick boneless sirloin chops.  When they are on sale at Sam's for under $2/lb, I buy one or two whole loins and I'm set for ages.  Here's a suggestion for the center-cut chops.  My favorite recipe:

Did you buy a whole pork loin?  I cut a roast off each end and slice the rest into nice thick boneless sirloin chops.  When they are on sale at Sam's for under $2/lb, I buy one or two whole loins and I'm set for ages. 

 I do the same thing only with the whole loins from Costco--really saves money doing it this way and it is easy peasy!
