Best thing you ever ate (whole 30 edition)?

Though I honestly prefer a nice crispy roast chicken than the chicken that comes out of the slow cooker. I roast a chicken every week, save the skin and recrisp it when ready to eat, make broth with the carcass, and use the meat throughout the week for various things, sometimes salad, sometimes soup.

 

I 100 million times over agree with you.  I don't really like slow cooker chicken, it is nowhere NEAR as good as roasted chicken in the oven.  I've tried millions of times to get a "rotisserie" style chicken out the crockpot with no success.  Don't get me wrong, I will do it in a pinch, but I'm not excited about it. lol

My all time favorite has been Nom Nom paleo's version of Dorie Greenspan's "Chicken in a Pot". I was rather skeptical about adding all those prunes in and cabbage wedges ..but it was super delicious !

Today I'm making this Burmese Chicken soup called Khao Suey as it's totally Whole30 compliant if I cook with Coconut oil or ghee. I will make zoodles for us and regular noodles for the kids :

Already been posted but I made my first slow cooker meal lastnight and it was nomnompaleo's chicken and gravy - so sooo good!  Definitely a fave.

We really loved The Best Chicken You Will ever Eat from Well Fed the link is below but the variation from the Well Fed cookbook mixes the spices with melted coconut oil before rubbing on the chicken I think this makes a difference...

I also made nomnompaleo's spicy tuna cakes this AM.  Her recipe is only in her app or her cookbook but she gives a photo shoot of the ingredients here... (you can sort of figure out the amounts).  I made them as patties and cooked them in a pan, not a muffin tin though.  Pans are much easier to clean :)

I'm currently working through my second whole 30 this year, and have recently discovered the deliciousness that is Franks Red Hot Sauce (original of course)! Don't know why I've never given it a chance before since I love hot sauce, but now that I tried it I'm never going back. I've been putting it in everything, then I found this recipe for Sweet Potato Buffalo Chicken Casserole and it's one of my new favorite things!

Zuchinni noodles with tomato beef sauce. I liked it better than real pasta!

 

I also made plantain chips fried in coconut oil with lots of salt. It tasted like french fries only better. 

 

My daily salad- mixed greens, cucumber, cherry tomato, avocado, green olives, lemon juice, avocado oil, grilled chicken and dried sumac.
