Personally, I would give up on the processed salmon and go with fresh or canned that does not have such ingredients. Nisin Chemical Compound Nisin is a polycyclic antibacterial peptide with 34 amino acid residues used as a food preservative. It contains the uncommon amino acids lanthionine, methyllanthionine, didehydroalanine and didehydroaminobutyric acid.
