I love it as a meal and I am sorted when it comes to protein & veg but I am not sure about getting enough fat into it. I will have avocado, mayo on the side and mayo on the cold cooked baby potatoes. Physibeth Posted August 4, 2014 Share Posted August 4, 2014 I'm confused...it sounds like with the avocado and mayo you have gotten fat into the salad quite well. A few chopped nuts or coconut flakes; peppers and tomatoes which I've roasted and stored in the fridge in olive oil (store-bought often have sugar); bacon, chorizo or similar (if you can find compliant versions). Physibeth Posted August 4, 2014 Share Posted August 4, 2014 Bacon would count as fat and a little protein. Of course making sure it is sugar and other nasty free. I would eat it as planned. Assuming you have at least a palm sized serving of protein it sounds like you have met the template so this meal should be fine. I usually eat the same salads over and over again, and I almost always dress with 2 T. of extra-virgin olive oil and 1 T. of either lemon or lime juice. Also (this takes some planning) if you keep pork crackling or other crispy fat, you can break it up and add it as a crunchy element to a salad (make sure it's not too hard).
