I'm not a Nature subscriber so I haven't read the full article. However, the synopsis states that mice were given "relatively low concentrations of two commonly used emulsifiers, namely carboxymethylcellulose and polysorbate-80", which "induced low-grade inflammation and obesity/metabolic syndrome in wild-type hosts and promoted robust colitis in mice predisposed to this disorder."

 

For me, this clarified why the Whole30 Program Rules forbids carrageenan (another common emulsifier). Other researchers have looked at carrageenan specifically & found it has similar deleterious effects:
