EmilyK Posted May 27, 2015 Share Posted May 27, 2015 Man, I was annoyed and cooking for the week on Monday and needed to make sure I had some veggies for lunches. I took carrots, broccoli, tomatoes, and RADISHES (came in my CSA for the last 3 weeks and had NO idea what to do with them), tossed with olive oil, salt, pepper, garlic powder, and finished with a drizzle of balsamic vinegar. Roasted at 425* for about 25 minutes and really...I have no idea what sort of delicious voodoo I created but I could eat those veggies all the time forever. SO DELICIOUS. Delicious Voodoo. I'll probably never be able to do it again, either--the exact proportions of everything, etc. But either way, I'm sure glad I did it this time. I've been imagining that my food is for a photo when I put it on the plate. It's really helped me stay more present and focused in my food selections. I don't want it to look like a dog's breakfast. I normally do not like radishes at all, but last week I ordered the strangest salad that was AAAMAZING - it had radishes, celery, bacon, and a soft boiled egg. I guess I like radishes after all!
