Favorite sauces?

Alright all, I'm looking for sauces: any and all kinds of sauces! Stuff to go over meatballs, veggies wether raw or cooked, burgers, grilled stuff, any cuisine type, any riffs on common ones (I substitute in a few Tbl of an infused olive oil such as carmelized garlic, or peppered bacon when I'm making mayo- so so good!)... You get the idea.

I've got my cook books open to Well Fed's sunshine sauce and housin sauce recipes, I'm ready to roll!

Not really a sauce, but I found a lemon-infused olive oil at the grocery store and basically put it on everything until I ran out. It just brightened the flavor of everything -- I put it on all kinds of cooked veggies, some chicken that got a little dry, baked sweet potatoes, hard boiled eggs, raw veggies. I really need to remember to pick up another bottle.

 

I like the Moroccan Dipping Sauce that's at the bottom of this chicken recipe too.

Avocado Cream Sauce (no link, recipe noted below)

Frank's Red Hot mixed into homemade mayo

Planks Love Guacamole Ranch Dressing

 

 

Avocado Cream Sauce

1 avocado

juice of one lime

1/4 - 1/2 cup fresh cilantro

garlic

coconut milk enough to thin to desired texture.

Blend in small blender or magic bullet until smooth

I added cilantro, a tsp of tomato paste and a tiny can of pickled jalapeños (ingredients were peppers, vinegar, and salt) to a batch of homemade mayo and whirred with the immersion blender to make a spicy southwestern type dressing. Very nice on burgers.

Ginger-Coriander sauce

 

Coriander stalk-Fist full(can use Cilantro also)

Dry Coconut-2 tbsp

Green Chilli-1

Ginger-1 thumb

Salt-To taste

blitz everything together with some water and you have a sauce

 

Cashew Sauce

  • Soaked Cashews-6
  • Lemon Juice-1 Lemon
  • Dried Rosemary-1/2 tbsp
  • Chili flakes-1 tsp
  • Onion-1-chopped
  • Oil-1 tsp
  • Salt to taste

Saute onion in the oil,Blitz rest of the ingredients with 2 tbsp of water and add to onions.Cook for 2-3 minutes.

This is my favorite thread so far, thank you for this!!! I have mostly been just mashing up avocado to add to things as a "sauce" but it's not quite right, I am going to try all of these!!!
