Last night was pulled pork (made over the weekend) with cauliflower rice, sauerkraut, cherries, and baked kale.  I'm glad I did so much prep over the weekend.  It made the evening much easier.

 

ThyPeace, the hard part of the evening was dealing with the thousands of ants who had found the cat's food.  OMG.

I'll make a very simple baked chicken, but full of flavor: slice couple of Vidalia onions and a large lemon, peel a HEAD (not clove) of garlic. Dump it all into a casserole dish, toss with EVOO, salt, pepper and fresh thyme. Cut up a chicken (reserve back for bone broth) toss in a little more EVOO, put on top of onion/ lemon / garlic mixture. Bake in oven at 375 for about an hour. So good, and nice with other roast veg you can throw in a pan and cook at the same time.
