I send the guys leftovers for lunch during the week (I forget I have to have lunch also) but on the weekends it has always been eat whatever. Well since I don't have lunch meat and we can't have certain foods, what do you do? Eggs are fast and easy. If you do have any odds and ends leftover from the week, find a way to use those. Many people keep hard boiled eggs in the fridge all the time -- when you run out or are getting low, it's easy to make some more, you can even do them in the oven. Instead of deli meats, keep cans of tuna, salmon, or sardines in the pantry. Tuna or salmon salad are easy to whip up, or you can pan fry the sardines or if you want something a little more time consuming, make some salmon cakes. You could even keep frozen burger patties in the freezer that you can cook from frozen. Frozen veggies are not my favorite, but they are convenient for those times when I don't want to cook. If you've got prechopped veggies in the fridge, stir fries or roasted vegetables are easy. Link to comment Share on other sites More sharing options...
MBC Posted January 17, 2016 Author Share Posted January 17, 2016 My problem sometimes is forgetting I have a fridge full of food then I make something else. Then have too much food in the fridge. Husband does weight lifting so there is never too much food in the fridge. On weekends I usually do batch chicken thighs in the oven. Slow cooked meals during the week.
