JulieP757
You might find the book in Barnes and Noble - at least the newer one. I ordered "It Starts With Food" on Amazon. Potatoes used to be forbidden. I think they were added in July 2014.

MeadowLily
To poke or not to poke...that is the question. If you remember Emeril Lagasse..."don't poke your potatoes. What have they ever done to you." He would always say quit sticking toothpicks and forks into everything. I don't poke any kind of potato. Tests have done and they don't explode in the oven. I don't bake potatoes in the micro. Many of us have poked them because our mothers did. If you like lighter and fluffier potatoes, don't poke them. Thanks Emeril. BAM! MeadowLily
I put greased potatoes (any kind) on a layer of kosher salt in baking pan. Do not poke. Oven 400 degrees. The kosher coarse salt does wonders for a potato. You can roll them in the kosher salt if you like. Fancy restaurant tip. Fluffy, light and delish skins. MeadowLily
That's great. Don't poke your sausages on the grill either. Don't poke anything and the essence will remain intact. Everyone will be happier all the way around. Emeril used to say it all of the time...it didn't matter what it was. Don't let the goodness and essence escape. Potatoes are fab when they're left to their own devices...their skins. Those perfect containers of ultra goodness. BAM! - Emeril Lagasse This is so good, you can eat it off a bumper. - Emeril LagasseLet's kick it up a notch! - Emeril LagasseOh yeah, babe! - Emeril Lagasse Kickin' it up to notches unknown Baby! - Emeril Lagasse Get to know your bird - Emeril Lagasse Use your knob - Emeril Lagasse We aren't building rocket ships here! - Emeril Lagasse"...and about 88 cloves of garlic - Emeril LagasseIt's ok ma'm, I do this for a living - Emeril Lagasse
