Hey folks, my husband and I are starting Wednesday.  I am looking forward to it but also constantly almost talking myself out of it!  I am still adjusting to life as a Mom of two with a two year old and a 6 week old!  Food has definitely been a source of comfort after a sleepless night with my newborn or a fussy day with my toddler!  Any other new Mom's out there who've overcome their demons?  

 

Also, I would really love some folks to share some of their favorite (and easiest!) recipes!  I was a vegetarian for the past four years and thinking about having meat - and not having legumes or grains - as a primary food source is kind of daunting.

 

I keep reminding myself it's only 30 days, but I also hope for it to be a guide to a lifetime of healthier eating!

I'm starting Wednesday too! Very excited and apprehensive at the same time. I am committed to do this though, I need to make this change to be healthy!! I just recently had back fusion surgery, it will be two weeks tomorrow. I have not been tested for celiac but definitely am sensitive to gluten, soy and diary. I have been Gluten Free for 2 years and limit my soy to as little as possible, sometimes that is difficult since I love chocolate. I have managed to find chocolate without soy though. This will be hard without chocolate, cheese and ice cream, my faves. I'm pretty good at listening to my body already and can tell when foods bother me. It is usually processed foods. I have been fairly good at stay away from those, not perfect though of course. I just know I need to reset, really fine-tune what I am eating and truly commit to fueling my body with the best things. I have done a clean eating plan for 2 weeks before with my husband and we both felt great. I know this will be worth it!! Like the book says "This is not hard". It really isn't when you think of all the benefits. :)

It's hard to offer many recipes, not knowing what kinds of texture or taste issues you might have with different meats. If you prefer ground meats, you might check out the variety of meatball recipes from Mel Joulwan's site. I really like her salmon cakes too, and that might be a lighter-tasting way to get meat in.
