JWS13
Hi! I've got a ton of leftover shredded chicken (made it for chicken salad). What are your favorite recipes that include shredded chicken?
LydiaJo
You could add it to almost any soup or garden salad. I like easy no fuss.
katieblue
Melt some clarified butter in with some Frank's red hot sauce and you have some fabulous buffalo chicken to put over a salad! Or toss it with some compliant salsa or pico de gallo and pineapple, and maybe stick it inside a sweet potato!
praxisproject
If you've got lots, freeze a single serve or two for some easy protein later Shredded chicken is great in thai curries or quick stir fries too.

Chillenb
Melt some clarified butter in with some Frank's red hot sauce and you have some fabulous buffalo chicken to put over a salad! Or toss it with some compliant salsa or pico de gallo and pineapple, and maybe stick it inside a sweet potato! I ran into the same thing a couple of weeks ago.I found this recipe: http://againstallgrain.com/2016/01/20/primal-buffalo-chicken-stuffed-sweet-potatoes-with-blue-cheese-dressing/ I left out the extra cayenne, mixed the sauce up on the stove (minus the carrots and celery because I was being lazy), and stirred in the cooked shredded chicken, and left it in the oven to heat up with the sweet potato. I made the sauce without the blue cheese, with homemade mayo, and it was delicious and creamy, and a nice mellow to the buffalo chicken. I found it fairly simple and quick! I ended up roasting extra sweet potatoes at the same time to save a step later, but ended up using them with the buffalo chicken. I had extra leftover roasted veggies on the side.
