If anyone is looking to peek interest and use a new way of meat without the sauce try working up new meatball recipes. Typically breadcrumbs are used but we all know the story to that. In these I call them the Southwestern Meatball. Below is what I used.

1 lb ground beef 80/20

1 chopped white onion

1 orange bell pepper

1 minced habenero pepper ( not necessary if you don't like spice)

1 minced Serrano chili pepper

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon garlic salt

2 cloves diced garlic

1/2 cup chopped cilantro

1 raw egg ( used as a binder)

Bake at about 350 for about 25 minutes. Do not overcook or they will be tough. Enjoy!
