Brunch help?

I have a really good friend who I regularly have brunch with on Sundays. Typically, her husband cooks for us and it is almost always biscuits and gravy. We sometimes go to a restaurant that is a Texas BBQ place and the brunch items are amazing. 

 

What I'm wondering about is what kind of questions I should ask about preparation of certain foods. The dish I'm thinking about getting is beef brisket (no BBQ sauce), 2 eggs, roasted potatoes, and a biscuit. The biscuit will go to my companions first thing (they're actually pretty awful biscuits, so that's not hard). I'm concerned about the potatoes, mostly, in terms of seasonings. Would the server actually be able to tell me if the seasoning mix they use has added sugar?

 

It's light on the leafy green vegetables, but this IS a BBQ joint...leafy greens aren't their thing...even in Portland. I'm planning on having a large spinach salad with grilled chicken and veggies a couple of hours after brunch.

Things I'd ask: ingredients of the bbq rub. Even if it has no sauce, there can be hidden nasties in the rub (like sugar, soy, MSG...)

For the potatoes ask about the seasonings and the oils used to prep them. Maybe call ahead and see if they can tell you over the phone and then confirm once you get there.

One thing you can do is have your normal not BBQ brunch and bring along a compliant casserole and maybe some fruit? I've been known to throw in leftover roasted veggies into my casseroles to get the veggies and make compliant sausage. Maybe the husband would appreciate a break from biscuits and gravy?
