Lumpy coffee with coconut milk?

I tried my first coffee without milk/cream this morning in preparation for beginning my first Whole 30 in two days. As suggested on these forums, I added coconut milk, which I shook well before pouring into the coffee. The taste was strongly coffee (I'm used to a milder flavor with the addition of cream and sweetener), which was surprisingly palatable and nice. But the consistency was slightly oily with floaters, which didn't taste bad, and seemed to disperse when I swirled the mug before taking a swig.

 

Is this your experience, too? Did the coconut milk curdle, or is this normal since it tends to separate even in the can or storage container?

Yes, to the above comments! I use my immersion blender and "try" to drink a cup before it gets cold and starts to separate. If/when that happens I reheat in the microwave and give it another whirl with my blender. I love it and after my trying it for the first time during a Whole 30 last year I never went back to sugar and cream.

I've used 1/2 can of coconut milk in two years. During Whole 30 I added Macadamia Nut oil to my coffee. Now I add it to green mossy tea.  Coffee Cold Turkey - no creamers...took my longing away.

My immersion blender broke today (or had been broken and I just discovered it after adding all ingredients for mayo to a jar-- now I have shrimp marinade, lol)! :blink:  I have just ordered a replacement which will hopefully arrive before my W30 gets too far underway because I can anticipate wanting creamy salads (tuna, egg, etc) to help me get through dinners and lunches.

 

When I get my replacement, I'll try that with my coconut milk coffee. Thanks!

I've noticed different brands of coconut milk act differently. Not all brands clump. You might prefer almond milk instead of you can't find a coconut milk you like.

I've had the same experience.  Some brands mix pretty well and some stay rather oily.  My favorite is Thai kitchen.  I pour it into a quart size mason jar and give it a good whisking and that usually mixes it enough that I can add it right to my coffee or tea.  I used my stick blender for the first time yesterday though and it was great. 

 

Another way to add to your coffee . . . try experimenting with flavors.  My two favorites are ground vanilla bean and homemade chai spice.  I add one of these to the grounds in my french press before adding the water.  It's nice to have some variety and make it a bit more special.  I ordered my ground vanilla bean here http://www.wildfoods.co/shop/organic-vanilla-powder-wild-vanilla. It's a bit spendy, but since I'm no longer visiting a coffee shop daily, I decided it was alright to splurge a little on myself in this way.  I've listed my chai recipe below.  I keep it in a spice shaker bottle and with just a good sprinkle per coffee, it lasts quite a while. 

 

Homemade Chai Spice:

1/2 tsp ginger

1/2 tsp cinnamon

1/2 tsp cloves

1/2 tsp cardamom

1/8 tsp black pepper

A question for those with more experience . . . will the blender keep the coconut milk mixed well enough to enable one to make iced coffee?  I tried making iced coffee a few weeks ago and the cold caused the coconut milk to solidify so it ended up more like a cottage cheese consistency.  Not exactly the refreshing drink I was hoping for.  Lol.

In winter I add pumpkin pie spice (compliant) to my grounds before adding water to the press... also a sprinkle of salt can help reduce bitterness and sometimes when not on Whole30, I put a few drops of Mexican vanilla in... I'm going to need to try your chai tho! Thanks!

In my experience, yes... if it's shakeable and liquidy when it goes in the coffee and you stir as you add, it shouldn't clump up... I've had the cottage cheesey consistency before with really lumpy coconut milk and while it tastes okay it's kind of gross to look at....

The fat and fibre in coconut milk is what causes the lumps. Heat melts it, so if you hate lumps, go with hot :)

 

Low fat coconut milk will lump less, but low fat coconut milk is missing the best part ;)

 

You can freeze some coconut milk into hard ice cubes and shake with cold black coffee, not quite the same but not lumpy.

 

For those who haven't tried it yet, try some cold brew coffee (it's easy to make if you have a plunger).

I ordered an aerator/milk frother and can't wait to try it out when it comes in! Cottage cheese coffee just doesn't sounds that good... even with the addition of that delicious sounding chai spice blend. LOL

Have you gotten to try the aerator/milk frother yet?  If so, how were the results?

 

I had a perfect iced coffee yesterday!  By whirring the coconut milk and coffee in the blender, then pouring over ice, it worked perfectly.  Hooray!  It's a refreshing drink with lunch on a hot afternoon.

Two things that might help - 1) pour the coconut milk in the cup before you add the coffee, leaving a little room at the top, and 2) use a whisk to froth and emulsify it. The whisk stands upright in the cup and you roll the handle between your palms.

You might try almond milk. Delicious if you make it at home. It tastes like a light creme. Just put almonds and water in a powerful blender then strain. We keep it in jars in the fridge.

I just purchased a battery powered milk frother for work because I have an immersion blender at home. It works great.  I use coconut milk in a carton (Real Thai) - check your labels.  I put the coconut milk in the cup first and froth it up then gradually add the hot coffee and mix it some more and it turns out great.  I think its better than coffee with milk.  I think you have to find the right brand of coconut milk, that's the trick, so experiment with a few.  It also doesn't hurt to have a good quality coffee as well.  I have no problem with it curdling and I usually take at least a couple hours to drink it out of my travel mug.

I also used a whisk for my tea and coconut milk - it worked and then just swirled it every now and then before drinking it (keep a lid on it then you can't see the separation !!  LOL)   I now have a magic bullet and that is how I blitz it and it works great for iced tea/coffee too.

So after the trouble of ordering the frother, then wondering why it wasn't coming in the mail, I realized I never finalized the order on Amazon, so I did that, then waited anxiously for the arrival of my new frother. But by the time it came I realized I just wanted to stick with black coffee since I'm used to taking it that way, now. LOL
