Jamy Smith Posted May 6, 2016 Share Posted May 6, 2016 I made the most delicious Sweet Potato Bisque last night! -3 large sweet potatoes -1 large sweet onion -2 Jalapenos (use 1 if you don't like it too spicy) -4 cloves of garlic -Small bag of organic baby carrots -1 large knob of ginger -1 large handful of cilantro (chopped) -1 tbsp of cumin -1 tbsp of ground coriander -Salt & pepper to taste -1.5 cups organic unsweetened coconut milk Drop everything into a large pot, and pour a box of organic veggie stock (or broth) in and then add water until all ingredients are covered. Turn stove onto High, and once it starts to boil then drop down to medium and cook for 60 min. Once everything is cooked, then remove from stove and let cool for 10-15 min. Once its cooled, then slowly pour in a few cupfuls at a time into a blender and puree. Once everything is pureed, then pour 1.5 cups of organic unsweetened coconut milk in and stir.
