Just sauté it up in what ever fat your using, a little onion, garlic.. eat as is or serve under something.  Sprinkle a little coconut aminos on top.(similar to soy sauce)

I love making slaw with bok choy. The stems give it a nice crunch and you can still use all the leafy parts. I usually make a spicy version with a homemade sriracha-type hot sauce (no sugar) and sesame oil along with the mayo.

Thai Green Curry is a WONDERFUL recipe that can be done Whole30 Complient and is excellent with Bok Choi. Honestly Bok Choi is one of my favorite vegetables and there is so much you can do with it, even just a little pan searing or steaming is great!
