Like what does "Add the eggs and fold them into the vegetables with a rubber spatula." mean? How do you fold eggs that are suppose to be beaten? Moderators SugarcubeOD Posted May 8, 2016 Moderators Share Posted May 8, 2016 Here's a youtube video... it's for beaten egg whites into cake batter but it gives the idea of 'folding'... you definitely don't need to be as careful with the fritatta as what he is doing here but it's basically stirring by pulling the bottom bits onto the top bits... they do this so that they keep the fluffiness of the beaten egg whites so that the cake/fritatta or whatever you're making is more light and fluffy.
