IMEDIATE HELP PLEASE!!!!

I tried to make the whole 30 mayo in a vitamin but wanted to double the recipe. After putting in about a quarter of the oil it would no longer mix so I turned up the speed (at this point the mayo was steaming too) after a few seconds at the high speed it liquified and isn't thick anymore! How do I salvage this and not waste all these ingredients!! Please anyone help!

If you google Whole30 mayo help, you'll find a lot of past discussions that might help.

 

In general, for future reference, Vitamixes run pretty fast/hot and a lot of people have trouble getting their mayo to work using them. Whatever you do, don't increase the speed, especially if the mayo is steaming. If it was thick and creamy at the point when it wouldn't mix anymore, you might have been able to just stop there and use it. I'm not sure.

 

If by chance you have an immersion or stick blender, this is by far the easiest way to make mayo. If your Vitamix is your only option, I'd recommend searching for tips specific to a Vitamix for making mayo.

If you could make a youtube video of successful Vitammix mayo, I bet you'd get a lot of hits -- from what I've seen around the 'net, there aren't a lot of folks who have had success with it.

I found that you can crank it up but not too high, the trick is to only do a single batch in the vitamix and when it no longer mixes to stop it and knock out the air bubble and then continue. I also found that if its steaming a little or its a little warm it still turns out fine. My problem was more with making a double batch and it liquefying after it wouldn't mix anymore. I was wondering if anyone had any ideas on how not to waste all the oil but alas I just scrapped it and started over...
