nanette09 Posted November 7, 2016 Share Posted November 7, 2016 Hi. I made the Butternut Squash Soup last night (The Whole 30 p.266). It was very delicious. However, after heating it in the pot to thicken, it seemed to boil away and I only got two, somewhat small, bowls full. I didn't have it covered while heating - was I supposed to? Hoovermom Posted February 26, 2017 Share Posted February 26, 2017 I purchased the cut up butternut squash (a whole package) from Costo and followed the directions. I had about 5 servings from it which I froze for later. The only thing that I did differently was to add a can of coconut milk to the recipe. It had a different taste and the coconut milk evened it out. Maybe the extra squash with the coconut milk made the difference????????????? Link to comment Share on other sites More sharing options...
