How much fat and starch at each meal?

I'm confused. Page 194 gives a meal template and says add fat in the following recommended amounts per meal, and there are 7 different types of fat listed. I know we don't add all these fats in one meal, but how many do we add? I see recipes that contain oil and avocado so it doesn't seem like we only have to pick one. I'm confused. Also, how many sweet potatoes are too many? I see we are to eat vegetables with every meal, but I don't see it specified anywhere what type at each meal?
