I just used the same recipe (one whole egg plus a yolk) & adjusted the amount of oil as I went along as I usually just eye ball my oil anyway. Duck & Goose yolks have a much richer flavour. I eyeballed the differences and adjusted the ingredients accordingly -- if the egg looked to be about 25% larger, I used 25% more acids. The oil, I go by taste. Duck egg mayo wasn't really my favorite. It had a richer, more assertive flavor which wasn't really my thing. But it was a fun experiment Link to comment Share on other sites More sharing options...
