Moderators SugarcubeOD Posted April 18, 2017 Moderators Share Posted April 18, 2017 I googled 'do I need to refrigerate tallow' and got this response: Tallow does not need to be refrigerated and can last a year or longer. I would not worry greatly about decomposition, but oxidation can be a problem. Make sure to store it in an airtight container and you shouldn't have a problem. Should be fine at room temperature. If you're concerned, it wouldn't hurt it to put it in the fridge, but it might get hard enough to be hard to use.
