This is technically compliant altho drinking juices and smoothies is not recommended.  We want you to eat the foods - juices are all the sugar content unbound to the fibre it belongs with... not a great choice but should you choose to drink it, you would not be off the program.

My understanding of gazpacho is that it's cooked and cooled and then blended veggies... ergo they would have their fibre still attached... I don't think you juice the veggies to make it... so it's a bit different and yes, gazpacho would be great, just make sure that you're adding protein to that meal, probably some more veggies as you say and then a fat :)

I briefly blend canned tomatoes, red peppers, cucumbers, scallions, garlic  (all raw) with a little vinegar and olive oil...then add a bunch of the same (save the tomatoes) in diced form

so not cooked a cold soup with all raw ingredients.
