It says to pre-heat the oven to 425 and to roast the chicken uncovered for 1 hour and 30 minutes. Making the chicken this way extremely overcooks the chicken. This is generally how I roast a whole chicken and it always turns out moist and delicious... is it possible your oven is actually hotter than the dial says? It doesn't really matter tho, use a meat thermometer and whenever it goes off, your chicken is done... ovens vary, altitude plays a part etc... so cooking times are often a guide... My favorite roasted chicken recipe calls for 1 hour and 15 minutes in a 350 degree oven for a 3# chicken. After roasting, it needs to rest for 15 minutes to redistribute the juices before carving.
