Colorshine Posted August 3, 2017 Share Posted August 3, 2017 We are attending an end of year celebration for my kids swim team. I need to bring a hot side dish. They said something like mac n cheese or beans. Which clearly doesn't work. I can bring it in an instant pot or crock pot. SweetEnough Posted August 3, 2017 Share Posted August 3, 2017 How big is the crowd? If it were me, I'd do baked potatoes. They're cheap, easy, and portable (in a crock pot). You could even slice the potatoes in half lengthwise and bake them that way, to make them go farther. Bring sticks of butter (and ghee for yourself), and maybe some toppings for the kids (if you feel like it) such as bacon bits, cheese, sour cream, salsa. Keeping hot foods at temperature for a potluck can be a pain, so I might ignore the "hot" in favor of a nice potato salad with hard-boiled eggs (if you use redskin potatoes, you don't have to peel them), or a salad of cooked green beans, potatoes, and halved cherry tomatoes, cooled and dressed with lemon and olive oil.
