I am on day 6 of whole30 and my kombucha is ready for bottling. I add fruit and nothing more. Is this complient? Link to comment Share on other sites More sharing options...
jmcbn Posted September 6, 2017 Share Posted September 6, 2017 Technically I guess that this is compliant because you're not adding any sugar to the second ferment (fruit has only naturally occurring sugars for anyone questioning this, not ADDED sugars), however the subject of Kombucha made with brown rice syrup isn't really covered. And whilst both rice & sugar are off limits, sugar isn't really a gut irritant in the way that rice can be for some folk so it's really a bit of a grey area because like the sugar most of the brown rice syrup will have been used during the first fermentation. Personally I'd go ahead & bottle, but maybe hold off on drinking any until the reintro process when I'd trial it along with non gluten grains.
