BermyGuy
Just prepping for day 1 and decided to make mayo. We have the ReaLemon brand, 100% Lemon Juice but not sure it's compliant. The ingredients are: lemon juice from concentrate (water, concentrated lemon juice), sodium benzoate, sodium metabisulfite and sodium sulfite (preservatives), lemon oil. Thoughts? Moderators Tom Denham Posted January 1, 2013 Moderators Share Posted January 1, 2013 The sulphites make it a no go. And there are better products available. I buy a bottled lemon juice from a health food store that is just lemon juice. I keep it in the refrigerator when I open it. Another alternative when making mayo is to use apple cider vinegar in place of lemon juice. That's what I do.
BermyGuy
Thanks! Living in Bermuda makes it difficult to find some of these "health food store" items. We'll use apple cider vinegar this time. Just curious, would using squeezed real lemons work?
Susan W
I use a fresh lemon. I make a salad dressing with the rest of it.
