ReaLemon 100% Lemon Juice

Just prepping for day 1 and decided to make mayo. We have the ReaLemon brand, 100% Lemon Juice but not sure it's compliant. The ingredients are: lemon juice from concentrate (water, concentrated lemon juice), sodium benzoate, sodium metabisulfite and sodium sulfite (preservatives), lemon oil.

Thoughts?

The sulphites make it a no go. And there are better products available. I buy a bottled lemon juice from a health food store that is just lemon juice. I keep it in the refrigerator when I open it. Another alternative when making mayo is to use apple cider vinegar in place of lemon juice. That's what I do.

Thanks! Living in Bermuda makes it difficult to find some of these "health food store" items. We'll use apple cider vinegar this time.

Just curious, would using squeezed real lemons work?
