jennycash Posted February 14, 2013 Share Posted February 14, 2013 i threw these together on a whim last night after a "what-do-i-have-in-the-fridge" raid. they turned out SO delicious, and now i am obsessed. just made another large batch of batter to have for the next few days. here's what i did: 1 can pureed sweet potato 1 medium-sized zucchini, shredded (i used a box grater) 1 extra large egg (or 1 regular and one yolk if you think you need it) 1/2 c - 3/4 c almond flour few shakes of garlic powder, salt and pepper mix everything together. i added 1/2 c almond flour and then kept adding sprinkles until it was about the consistency of a waffle batter. i scooped spoonfuls onto a nonstick griddle with coconut oil. they are a bit hard to flip, but crazy delicious underneath a steak or as a side to eggs. they are a nice change; taste potato-y but light and crisp. hope you enjoy!
