I ended up steaming the chard and wrapping it around my spiced lamb meatballs with a little fig compote in each (recipe for meatballs/compote from Practical Paleo). My mom always used the swiss chard from our garden instead of cabbage leaves for cabbage rolls. They're easier to roll, you don't have to blanch them first, and they have more flavor. I made 'fritters' out of the root part by shredding them, salting them, squeezing out the liquid and then mixing them with an egg. I pan-fried them in batches in bacon fat and dusted with salt and pepper...yum! My husband took all the greens, cleaned them and then made this recipe. I had him sub lard for the olive oil and he put too much red pepper in it for my tastes but in general, it was very tasty.
