    Hoot! I think your lunch alone out meal prepped my entire week! At least I remembered my wallet this weekend so the grocery run was “only” two trips due to running out of walnuts. If it’s not a wallet it’s a walnut?! I think I’m getting a touch slap happy. But meal prep is basically done, one more dish that I plan to make hot/fresh tomorrow but otherwise I’m set for the week. Off to get in my yoga and then maybe stare at the ceiling in savasana for an hour just to be off my feet. It was actually nice to be in the kitchen on a rainy day here but I’m shooting for ultra minimal on prep next week.

    Mama Pajama, Hope things are going well for you. Hubby and I are also "using up the junk," as it were...and I, too, have been feeling like crap! So good there are others here who understand. Am aiming to eat a real breakfast tomorrow!

    agreed on the menu planning getting tougher, on the one hand, but on the other, I'm starting to get it a little bit. for my (rather late) lunch, I poached chicken with peppercorns, sage, salt, garlic, and a bay leaf, then cut it into chunks to make into chicken salad with cucumber, basil, parsley, olive oil, lemon juice, and cinnamon-pear vinegar, which I ate on a bed of romaine & spinach, with slivered almonds, nutritional yeast, and garlic aioli!

    today I made aioli and pesto. gonna poach some chicken breasts tomorrow, and use the stock for butternut squash soup. then I'm gonna make 'veggie scrap' soup from all the veggie peels and ends I've been saving in the freezer. looking forward to making sunshine sauce with tahini, and seeing how that works...(just thawed the tomato sauce for use tonight, and still have roasted red pepper sauce in the freezer). don't know why I'm digging making all these sauces - maybe because I'm tired of cooking meat and veggies?

    Cheers!!! That’s the beginning of my tomato sauce & my la croix to kick off Saturday night. I survived baseball & many temptations today and I’m feeling old!

    Today was my most challenging day to date. We had people over and I really wanted to be able to eat what they were having. But I persevered. They say the second Whole 30 is harder than the first, and so far I’m finding that to be true. I don’t remember the last one being this hard.

    two more days - I'm not ready! I have to go grocery shopping and make a meal plan...I've been eating all the junk in the house 'to get rid of it', and I feel like crap. oh well. I made my bed, guess I'll have to lie in it, right?

    There's also a huge difference in the impact to your blood sugar when having a breakfast like you had (with carbs, protein, and fat) and having a breakfast like pancakes which is virtually all sugary carbs. You can't just look at one aspect of what you're having in a meal (like the beets) when you're not having *only* beets as your meal. Maybe comparing beets to pancakes, you'd see a similar impact on blood sugar, but when you factor in the eggs, avocado, and whatever else was in the hash, it completely changes things.

    I have decided to start the whole 30 as well on June 1st! My name is Kathy and I am 51, both my sister and her daughter have done it and I am in such bad shape I have decided to commit! It’s going to be tough but in 2015 my husband died and turned my world upside down. I have 2 adult kids, I now live in my own and it’s time to work on myself!
