    Sinking and floating are both normal. Your new batch should grow a new Scoby on the surface as it goes through the fermentation process.

    Haha I think I have zero demand in my area of clubs and bars or banks and well more bars I think I should exchange scobies for bottles. Too bad I can't store them horizontaly. Wine bottle racks with booch. Booch cellars. Booch tasting tours

    Hi gang! I've hopped on the bandwagon and am attempting to grow a SCOBY in my pantry from a bottle of regular GT's and a cup of sweetened black tea. I feel like a kid again doing a science experiment. So fun!
    Though when I was in the fifth grade I never imagined I could have partners in crime from all over the world via the magic of the intarwebs. . . . Love. It.

    I was thinking along the same lines KB ... Now to figure out where that is, not very evident chez moi. I wonder if the landlord will let me dig a kombucha bunker in the garden?

    This kind of depends on you and your comfort level. I bought a kit (from Kombucha Kamp) because 1) I was a little intimidated by the process and didn't want to screw up, and 2) I didn't want to wait any longer than I had to (growing your own scoby takes at least a couple of weeks, plus then waiting for the first batch to be done on top of that. With a kit, you just have the waiting for the first batch to be done). So are you more the type who is willing to wait longer to do it all yourself, or are you more the type to want things to be done as fast as possible? Lots of people have had good luck doing their own from scratch, and now that I know more about it, if I needed to restart, if I lost my scoby or something, I'd be okay with starting from scratch without the kit.

    Hi @MARTHALEEĀ - nuts, if compliantly roasted or raw, are a fat source albeit not a great one. They have a few issues. They can be hard on the gut and cause digestive issues, they are really easy to over-eat and hard to stop for some people, they can keep the sugar dragon alive and well depending on what variety and mostly they are very high in Omega 6 which our diets are generally over-flooded with. They can also disrupt sleep and if you eat enough of them (see: hard to stop), they can push more nutrient dense foods off your plate.
    You can eat them...........but the recommendation is to limit them to "occasionally". If you need a metric for "occasional", we recommend no more than one closed handful every other day. Daily consumption or even regular every-other-day consumption is not recommended.
