    Why Sear Then Bake?

    It seals the juices in. If you bake from raw, the juices tend to leak into the pan and you end up with a drier result.

    Day 2 of "Dammit, Schrod, stop eating like a bloody teenager whose been left home alone for the week with an unlimited food budget" Meal 1: 2 Prosciutto, egg, mushroom and capsicum bites with spicy kraut Meal 2: Beef "stoup" with cauli rice Meal 3: Chicken and veggie casserole cooked in the slow cooker because I'm a grown-up who has plans after work and instead of making an excuse to grab something takeaway or suboptimal I used my not-inexpensive but completely underutilised slow cooker to ensure that there is something tasty and convenient to come home to. I really need to get on some exercise too. I'm in that horrible "I'm too unfit to do what I used to do (taekwondo and running) but am at a loss to know what to do to get back to the level of fitness I need to be to do what I used to do". Plus I have bad knees and tendonitis in my elbow. I'd do aqua aerobics but it's such a time killer, by the time I get there, change, do the class, shower, change, come home, shower properly, it's a 2 hour commitment, minimum.

    Oh, I'm also reverting to my peculiar brand of intermittent fasting on weekdays - I am more than happy on black coffee and herbal tea until around noon, then I have meal 1, meal 2 is around 3:30, 4pm, meal 3 around 7:30 and then herbal tea until bed. If I eat early, I eat all day.

    Mini-reset day 1! Meal 1: 2 Prosciutto, egg, mushroom and capsicum bites with spicy kraut Meal 2: Beef "stoup" with cauli rice (diced beef, carrot, celery, mushrooms, beef stock, tomato paste, fish sauce, coconut aminos, tabasco, and a bit of potato starch to thicken - not thick enough for stew, not thin enough for soup, but lovely and warming!) Meal 3: I forgot to get something out of the freezer, but think it will be lamb chops with egyptian dukkah, roasted pumpkin, cauliflower and brussel sprouts with a garlic and basil ghee drizzle.
  6. Finished round 1, felt amazing. Migraines gone, alert, symptoms I didn't realise I had were gone. No vertigo after 18 months of it never ending... I started the slow reintro, and that was a mistake. I ended up putting off too many things, letting things slip back in (WINE!!) and came up on holidays with stuff not reintroed, which means that now I'm back at square 1, vertigo, awfulness, feeling terrible and none the wise of the culprits (still looking at you, WINE). So Round 2 starts tomorrow and while it might go longer than 30 days, I'm doing a proper reintro. Tomorrow I'll food prep - lay in some soup, a hearty beef and veg stew for lunches, some mayo and chimmichurri, roast a bunch of veggies, and make some bone broth.

    OK, prep changed shape, I have prosciutto, egg, mushroom and capsicum bites for breakfast, and a beef and vegetable 'stoup' on cauli rice for lunches. Also prepped cheddar bay crust breakfast muffins and roast beef with salads for the hubster for lunches. Threw out and/or finished a few non-compliant things today, but mini-round on track to start tomorrow.

    That's actually exactly what I'm going to do! a 2 week mini-reset. I'm just all or nothing. I'm either perfectly happy on round, or eating a pack of cookies for dinner. Plus eating crappy makes me feel crappy and feeling crappy makes me eat crappy. Ironic. I've had my yearly "event" - we throw a 4th of July party every year where we host 40+ people and serve every stereotypical USA food under the sun (I'm an American living in Australia) and it involves interstate guests and leftovers and just insane foods. But tomorrow is food-prep and I'm back on track. I've gained 7lbs!!

    OK, Round 3 starts on Monday, because I am USELESS at Food Freedom. Utterly useless. Food prep weekend, here I come! I'm planning: Egg muffins with veggies and wrapped in prosciutto Sri Lankan beef and coconut curry with cauli rice Chicken pot pie soup Beef bone broth I'm also going to prep a few slow cooker meals (beef pot roast with veggies, lamb shanks, curried chicken lovely legs) for the week so there are no excuses.

    Oh, I love my plated fats, but today I feel sooooooo gross and full of fat and cheese that I'm going really light, the thought of oil makes me want to cry haahaa. I feel like I have deep fryer oil in my veins.

    BLERGH So I got through my huge event, and the foodie weekend from heaven/hell and I feel GROSS. I had a lovely time, and it was amazing to food with my BFF but I can't wait to get back on track. I NEED VEGETABLES!! I don't think I'm going to start another round, but really commit myself to food freedom, and focus on mostly compliant but not counting days. Kind of paleo, I guess? Was wondering if someone could clarify from the powers that be - Whole 30 social media is abuzz with the rumour that with the sale of Zoe's Kitchen to a new company, Whole30 items have been disappearing from the menu and things that were once compliant no longer are. If there an official stance on this?

    Ended up eating 3 tiny chocolate eggs, left over from Easter last night. I didn't even enjoy them and have no real reason I ate the second and third after the first was meh. At least I stopped at 3? I'd chuck the rest but I'm going to use them in a dessert for an event in a couple of weeks instead. Bonus is, they don't seem to have done me any harm.

    Everything I've eaten so far has been compliant, but I'm having one of those days where mentally I'm feeling like I'm 'failing', which is dub for so many reasons. A. I'm not even on round. B. Everything I've eaten has been compliant anyway. C. I haven't even eaten that much!! In addition to meals 1 and 2, I've also had a handful of almonds and that's it. I know what this is, and its my awful subconscious trying to tell me I may as well just cave and eat something that I'm going to wildly regret. I'm having terrible sugar/junk/take-away cravings. I blame the 3 days in a row of drinking wine - it leaves me feeling blah, and a bit anxious, and I don't sleep well so I crave fast energy out of weariness. I know that by tomorrow it will improve, but that doesn't help right now!!!
  23. I haven't had any artificial sweeteners since I started my first round in January. It's the only thing that didn't come back between round 1 and 2 and I have no intention of bringing them back, not for any big reasons, I just feel like they'd taste gross now that I'm not used to them. Oh, and agree with the above - I'm NEVER buying mayonnaise again.

    No. More. Wine. Had a couple of glasses of red last night because something we'd been waiting for for ages finally came through. Not really a celebration, but an excuse haahaa Fish day! We're having salmon, because salmon. It means I'm having salmon for all 3 meals today and I don't care because salmon! Meal 1: Hot smoked salmon and spicy kraut Meal 2: Salmon patties with spicy mayo and coleslaw with Thai dressing Meal 3: Salmon with asparagus, broccolini, lemon garlic potatoes and kalamata tapenade
  25. OK, here's a question that might not get asked much... anyone felt BETTER after reintroing a food? Context - Round 2 was nowhere near as good as round 1 for me. I slept great, but didn't have energy, still struggled to get out of bed, my bad knee(s) still hurt, I still had brain fog, and generally even getting out for a walk was a chore. Yesterday I reintro'ed legumes. Peas at lunch, lentils and peas at dinner. This morning - I bounced out of bed 15 minutes before my alarm, and vetoed the escalators to walk up 3 very large flights of stairs from the train station, I'm perky, clearheaded and awake. What gives? Was I not getting enough carbs? Not enough food? Pure coincidence?? I do have enough time during this reintro to do 2 days on a food then 4 days off, so I'm going to have legumes again today and see how I feel tomorrow, but I wish I'd felt like this throughout the round! Anyone got any insight?
