    Not grossed out to touch it, but tasting the tea will be a challenge.  I smelled it last night and it was interesting to say the least.  Earl Grey is such a specific smell, and it's pretty much gone. 
     
    I will start brewing tonight!  Best Friday night plans I've had in a while!  :)

    Facial! Whaaaat?! I know that Liz will probably say "yep, have been doing it forever". I wonder how can you mush it up, blender? So cruel, my heart will be bleeding to watch that  I am curious to try tho. Just when I thought I couldn't gross out people more with eating kidneys and hearts. Thanks for heads up! 
     
    Megmac, it's kinds thin-ish for a 3 week, tbh. But it's not abnormal and like Sophie said, it will do the job. Have you added a bottle of store booch to fatten it up? Did you move it from the light? Oh poor you, waiting must be killing you. Give it couple more days and start brewing I say.

    Tried my first bottle of white tea kombucha yesterday and LOVED it.  Hubby too.  More than black tea booch.  Switching white tea to the big jar once we've vacated the black batch which is currently in there.  
     
    SO nice for fruit flavours.  Excited about opening next bottle (in about half an hour )

    Uses and Storing extra SCOBYs: they are great for facials. Sounds gross but results are worth the ick factor. Take all or some of a scoby, mush up ( technical term) and schmear on your face. Let sit for 15-30+ mins, you'll feel it feeding on the bacteria on your skin. Rinse off and voila, smooth soft skin. They are great to add to garden, compost, or in food.
    Can store in liquid, just make sure they dont dry out, for months. And of course, passing them on is a great gift.
    When brewing: clean vessels and utensils with white vinegar, NO SOAP. Distilled water for tea and dilution. If youre using metal lids during second fermentation, placing a bit of wax paper under metal lid helps. I started brewing a few months ago and LOVE the tea and the process.

    Hi all! I just bottled my first batch. Six pretty brews having a second ferment. It's hot here in Texas so I tested at five days and it wasn't ready. I waited and tried again at seven and it tasted like vinegar. Minor panic. But after reading up I decided to go forward with the second part. I poured a glass and that did not taste like vinegar, I could taste some sweet. So I think it's all going to be okay. I don't have a finished bottle yet but this is much easier to do than it sounds. Thanks for all the good information and the flavor ideas!

    Percypat, I'm not good at the patience thing, so I suppose this will be good for me
     
    I've bought a scoby along with the continuous brewing set up. (Both together were about two-thirds of what a bottle of kombucha would have cost me)  And they're coming on Thursday  I feel like I'm waiting for Christmas.
     
    Thanks for the link Nadia, that's totally the sort of stuff I was looking for.
     
    We have a few dozen Grolsch bottles already as we brew our own beer and cider. (Our pub throws out the empty bottles...)

    Welcome to the fold of neurotic, crazy booch brewers Annabel!
     
    I'm fairly new to it myself, but I have discovered that it really is a lesson in patience.  It's not hard to do, there's just a lot of waiting (especially when you're waiting for that first brew to HURRY UP).
     
    If you can get a SCOBY it will speed up the process.  The other option is to grow your own one from a bottle of store bought booch.
     
    As for my brewing container, I found a 6 litre jar at a store at my local shopping centre.  So I batch brew.  The continuous brew option looks pretty nifty though, less fiddly too.

    Hi Vian!  I made a pure white tea batch and it seems to have worked out ok.  I've bottled it and am waiting another day or so for it to carbonate so I'll report back when we try the finished product.
     
    The concern is that there isn't enough caffeine in white tea.  You could always add a couple of green or black tea bags to the mix to boost it.

    You can still add it!
    Yesterday I bought a small booch bottle as I really needed it. Not a GT. My first reaction was - ewww, homebrew is so much better! I used to love this brand.
    So many new brands appearing, crazy. All of them have spoons and spoons of sugar added, blergh.

    Here is the Patrick family.
     
    Black tea, green tea, white tea and of course Frank, who it all started with.
     

     
    Bottled some white tonight: one white cherry, one blackberry and one blueberry.  Rest of the booch from that brew got used as starter for another white batch and the batch of green.  I keep reading green tea is good for bubbles.  I doubt we'll keep all three types going.  We'll just figure out what we like best and then go to two batches a week - one for mid week bottling and one for the weekend.

    Nadia, you can make yoghurt with dairy free probiotic capsules.  I've done that with coconut milk, though I did add tapioca starch and agar agar to thicken it up.  I know you do it with coconut meat so you wouldn't have to.
     
    megmac, I think the most important thing is to keep it out of direct sunlight.  I haven't kept mine in the dark and they're growing like the clappers now.  But it's definitely worth a try, KB's is thundering along too, so I'd try what she says.

    Yes, white tea works, but some of green tea has to be added to be safe. I would brew a standard recipe for the first time and figure out the details of the process first. It is a matter of personal preferences too I think. Black tea gives bold flavor and I love it plain. It gives interesting results with flavoring, but I find that it takes bold flavors best. My fav were strawberry, apricot and cherry. It flavors with teas good too. Green gives grassy flavor. I don't like it plain, but maybe it depends on the quality of tea. I had non fancy teabags. Ginger and mint were the best pair. White tea (with a tad of green) was super light and took all the fruit flavors well. Now I am brewing hibiscus/black and green/white.
    Sophie, she is sooo pretty. Ah my ugly monsters want to be like her.
    Derval, so exciting! I have ordered water kefir grains and want to play with it. Restless crowd, always keeping busy with food projects.

    I am thinking of buying a big jar with a spigot to make bottling easier, and keeping my glass gallon jar for my hotel.  Does this sound about right?
     
    And yes...I don't even have a grown scoby and I'm talking about my hotel.  I have faith.
     
    Where do you get lavender and it what form?

    Ok, action here again, love it. 
     
    Liz, good to know. I love using little doughnut peaches, best flavor so far. I suspect that booch is giving me a bit of a trouble (oh no no no please not be true), so I want to try yeast free fermented stuff. Looks like same process as with booch, but way shorter brewing time. This is a disadvantage, I like to forget about this for a week. I also really want coconut kefir. I bet you've done it too. 
     
    Jenna, I like to puree ot cut fruits, seems to release juices way better. Just saying. 
     
    Dried stuff works very good in my experience. I've tried prunes, cherries, turkish apricots and raisins.
     
    Coconut. I've added coconut water to booch, nothing exciting. I've added young coconut flesh - beeeh. Coconut extract - YAY. So is almond extract. 
     
    Sophie, white tea and fresh mango are meant to be together. My couple mango trials failed before, but this time!!!! Oh my. Strawberry is my favorite for all the times and a staple flavor. So comforting. Especially with mint. 
     
    Pineapple didn't translate at all, again it might have been just too strong of a plain booch to start with.

    was just invited to impromptu pool gathering where beer and pizza will be served.  They are all going to be so jealous when I waltz in with my mason jar full of iced Lavender Peach Kombucha.  People, you have to try this!  I just popped the top on it and my Mulberry Basil, both are flavors you must try next round, to DIE for!!!!!  I will not being feeling deprived at all this eve

    Kb, I am super interested in hearing how the watermelon/lime/mint comes out, it sounds so refreshing!
     
    I opened my Orange Beet Spice today and it was really tasty and the color made me really happy!

    Tonight I FINALLY bottled the mango blackberry lime jalapeño! When I had leftover purée, I heated it and poured it over salmon. Quite good!
    I also made blueberry/ginger, raspberry/lemon/ginger and watermelon/lime/mint.
    Will keep you posted!

    Dried fruit and concentrates are always available/cheaper. Dried fruit have high sugar content = fizzzzzz. I guess that's it.
    Kb, forgot to tell. Taste comes out way more after a night in a fridge, you are right!
    Note to self and others - don't forget to label. Barbie drinks. Fresh figs make booch pink <3. Now what.

    Brewing vat of white tea, pale girly SCOBY looks ready to get to work.  Off to shops in a bit with hubster to buy another big jar.  (He announced this morning "Might have to have a bit more kombucha today!" - the progress, it is happening).
