    Of course I checked on my pet this morning before I left.  No change.
     
    In all seriousness, I am grateful to this forum!  I would never have had the guts to try this without you guys.  It seemed totally overwhelming.  And how fortunate that we have so many different time zones involved.  I am really not one to "freak out", but I did freak out at 11:15 (EST) last night and NEEDED an answer.  Thank you Susan!
     
    P.S.  My husband thinks I am NUTS...caught me in the playroom with a flashlight last night checking out the surface of my science project.

    Definitely trying peach ginger basil next time! 
     
    I just swapped out a new batch.  Orange flavored starting 2nd ferment, new batch brewing with scoby and baby scoby moved to the hotel with grandma.  Fun!

    Orange vanilla creates the most swypo cream soda flavor ever. 
     
    As per my posts above (sorry for the broken record peeps) beets - bake them, cut them, add them. Keep couple days in a fridge after straining. Flavors mixed with orange juice I've added. I think a bit of strawberry will be awesome to add. I also love carrots. Carrot+ginger, Carrot+apple and carrot cake pie spices All are good!

    Just a little tingle of fizz, nothing crazy.  Raspberry-vanilla very tasty.  Even hubby said "hmm, not bad" after a sip.

    FINALLY!  Scooby food is made and on a shelf in the playroom.  No problem with warm, since I'm in FL.  Let the countdown begin!
     
    I will let you know if Earl Grey is a go or not.

    Susan, any freezing success? Btw - I put loose tea for flavoring, no tea bags.

    Megmac, just steep it in a mug of boiling water for 30-60 seconds, discard this water and proceed as usual. Caffeine is released with the first steep. 
     
    D, once you figure out the pattern you won't be out of booch I think. That's why I prefer to make a mess twice a week, bottling + flavoring weekly supply and straining the next day.

    Clearly I have a problem.
     
    I played a little hookie from work this morning to go get plain Kombucha so I didn't have to wait until Saturday to start.  I got some decaf black tea, too.  I'm thinking I'll go half caf.
     
    Starting tonight!  I've already decided on a name-can't wait to see Scooby begin to form!

    I am looking forward to fresh peaches for peach raspberry and I bought a mint plant just for the watermelon mint!

    I may have to take my cloth off tonight and get a nice close up shot of Nadia.  My SCOBY named Nadia, not the other one .
     
    Panicked a bit this morning when I saw some discoloration BUT you all have said unless it is hairy, it is not an issue.  Right?
     
    It is probably about 1/4 inch thick now!

    Have I said how much I enjoy this thread?  Finally figured out how to add pics !  I have to laugh, I had an Earl Grey geyser this AM, there was a plumber here when it happened and I shrieked cause it surprised me.  He came dashing out of the bathroom to a kombucha covered me.  He was quite perplexed! 
     
                           
     
    I bottled just a few days ago and they are already ready to go, the warm weather is definitely speeding up the process.  The best part of that is more booch to drink!
     
    Nadia -your lemongrass/cardamom/peppercorn sounds fab.  You all have given me so many new ideas for my next bottling!

    I was thinking about letting it sit without the cap to unfizz and mix with coconut cream or avocado or banana. If no success I'll make granitas I've seen kombucha mixed with nuts into creamy drink, but you and I are on a nut'free strike. 
     
    Yes, thanks to Lizzard (I wish I could refer by name)) we've learned about tea flavoring. It is so much easier to make. It's so delicious too. I took a sip of my lemongrass/cardamon/peppercorns one called Exotica. Soooo good. 
     
    2 days, really? I had my kitchen covered with sweet tea after two days as I tried to open my bottles. I'd say experiment it is.

    Eureka...I just checked on my bottles and I have fizz. So much so that the ginger sitting on the bottom flew up to the top with the bubbles. The bottles starting with the .5% alcohol have the most fizz. Interesting. I dont think I need to strain it since the only thing in them besides tea is ginger and it politely sits at the bottom. Happy days.

    Heyo!
     
    Here is my very first bottling ...
     

     
    1 ginger, 1 ginger-lemon, 2 raspberry, 2 raspberry-vanilla, 1 mango and the big one is plain.
     
    We left quite a bit of space as we are scaredy-cats.  We'll leave less space and try for more fizz as we get braver.  I say "we" as hubby helped with the bottling but is still refusing to taste.  (And he still wants me to get clearance from doctor about drinking this because of my immuno suppressants.  I bet doctor won't know what kombucha is).
     
    I'm so impressed with how robust my skinny pancake baby is.  It's so thin but sturdy as can be.  It's back in the brewing jar with Frank.
     

     
    Super dark second brew.  Hoping baby thickens up so I can get a white-tea batch going soon (hubby said he would try that).  Come on boys!
