    Aw, I love family photos!

Have to get myself off to uni today but will be testing my brew when I get home later!  Aie!  Exciting/scary.

Lizz for CB, you put in what you take out when about 25% is gone. I have even gone as low as 70%. You could replenish every time you take one bottle out but that sounds too high maintenance. When you take only 25%, it only takes a day or two to convert to Kombucha. It took longer when I took 70% but maybe 5 days?
I like it because I am not tempted to make a jacket with my SCOBYs with CB. ;0) You only touch the SCOBY when you want to peel off a baby to make a scarf or when you clean out your vessel 3-4 times a year.

Picturing Susan washing scoby, pinning to dry, ironing and folding it. Ahah

OMG this thread is so so hilarious. Pixie dust definition. Ahaha.

Beets kombucha is so cool. Took a sip this morning. I made it with orange juice.

    CB = continuous brew.

I've got no problem drinking it, so I will overcome!
Could I get a definition for pixie dust?
    ########################
Pixie dust is what I call Nadias method. She just kind of winged it and ended up with crazy fizzy kombucha and very prolific SCOBYs.

"I must admit that I'm struggling with the grossout factor."

I empathize.  My hubinator is so geeked out by the SCOBY and yeasties that he won't even come in the kitchen when I am bottling.  A friend of mine gags when ever I open a bottle in her presence (I think she's putting it on but, I humor her anyway and laugh).

I think it's interesting, try to think of it as a science experiment!  Good stuff

Sophie, folded SCOBY looks lovely!! I have to admit, when I pulled my SCOBYs from my two containers, I sort of cleaned the brown stringy stuff off. I don't know if that was bad, but being a tidy person, I could not help myself. It was all I could do to not run them under the tap to really get them shiny and white.

Derval, I think maybe try leaving it doing it's second ferment thing longer. Mine so the same thing on a smaller scale. I see a little fizz when I bottle them. Then it's barely a tongue tickle (oh my) when I sit to drink them. There are lots of tricks to get fizz, but we won't discuss those yet. No need to get all complicated quite yet. Also...hmmm..you didn't flavor it with anything and some sort of sugar is needed to make the fizz, but you had so much fizz right off the bat. It's all such a fun puzzle.

Megmac, I have done both. My original SCOBY and it's babies had to be thrown out because of mold. I decided to make my own SCOBY to see if that would increase the fizz factor. I now have two big SCOBYs and two babies and am going to go back to CB (the big green in my picture is what I use) and one batch. I like the idea of both, but not sure why. I think I just love the whole process now that it doesn't give me nervous butterflies in my stomach.

I had a glass of mine this morning, out the garden, in a crystal glass. If the neighours saw me they must have thought I was one of those moms.

Not as sparkling as when I bottled it why is that? I left it overnight in dark and then put in fridge this morning. Maybe it was so bubby because it had just been transferred. Still pleasantly effervescent & a lovely flavour.

Two - 2gl and 1gl jars. This time I had 13 bottles, but I had some of this booch plain today and saved 2 cups for next brew. Should come to a 1,5 gl total. I think so.
Btw, booch is my Daddy's best friend now. Due to nasty chemo it's the only thing he can drink. His scoby is gigantic. We joke that one day Dad will have to start brewing in bathtub.

Sophie, I love you. Taco scoby. You are hilarious
My hard working scoby says hi from the booch factory aka kitchen.
I've made two with beets/orange, several regular stuff and the rest tea flavors (exotica with cardamom/lemongrass/pink peppercorns/pineapple/orange peel/coconut and strawberry rhubarb parfait with apple/hibiscus/raisins/carrot/beetroot/strawberry/rhubarb). I have more washi tape, so fancy bottles to come.
Second batch of white tea brew will be bottled plain.

Holy cow. Okay, I'm in. It took me 2 days to read this whole thread! I'm a booch addict and tired of paying $4/bottle. My hubby just happened to drink a 4 pack of Grolsch this weekend, so the preparations have begun. Stay tuned...

I am more concerned with tap water. Here they use chloride and this stuff is bad for humans let alone scoby. I'd leave it (add sugar) just for the purpose of experiment and start a new one meanwhile. Best case you'll have two scobies, worst case just one.

"By the way..how were the baby octopi?"

Actually we are having them tonight, hubs wanted chicken last eve.  The grill is heating currently and the little guys are marinating.  Excited, Thanks!

"Yes, I meant proportions of herbal flavor tea to the regular fermented booch for the second fermentation. Just one tea bag per bottle?"

Yes, I use 1 tea bag per 16 oz bottle or approx 1/2 Tbsp loose tea.

Susan, I add the tea to my second ferment.  I have swing top bottles and just dangle the bag right in there.  It's really delicious, I noticed on another thread that you were a fan of it as well, a must try!

I brew my 1F with Assam or sometimes even Lipton.  In the beginning I was combining black and green teas but wasn't a fan of the final flavor.  I only add other teas or flavorings to the 2F.

I boil tap water. I have brita, but it's a small filter, so it will take forever to clear 2 gallons. Lizzard, hey there. Plus one expert more, so we can pick your brains now. Proportions please

Just wanted to jump in on the herbal tea flavorings here, I have been brewing for about a year now and my favorite flavors have come from herbal teas.  My top favorites are ginger chamomile (nighttime), Provence Rooibos, any kind of rooibos or bush tea taste great with the booch, Earl Grey is awesome, hibiscus, Numi chocolate puehr, chai (I used whole spices), I could go on and on....  I have given up on fruit unless it's a complimentary berry because the teas taste so darn good.  I am up to about 2 gallons every few weeks and still can't keep up with my drinking habit

SCOBY update:  It is getting thicker!  We are at about an 1/8th of an inch, completely covering the surface.

I think in a week I will be able to start brewing my first batch.  So excited and so jealous of all of you.  At the same time, I am looking forward to getting all of these yummy flavors from all of you!

Haha I think I have zero demand in my area of clubs and bars or banks and well more bars I think I should exchange scobies for bottles. Too bad I can't store them horizontaly. Wine bottle racks with booch. Booch cellars. Booch tasting tours
