    It wasn't even hard after the first 3 days! But the first three days I felt a little lightheaded and just out of it, I increased plated fat and the general quantity of food I was eating and that feeling went away. Day 3 was quite a lot of time in the bathroom. ha ha! But after that it was smooth sailing. I have been telling a lot of people about the plan because it has really helped me. I think so many of our health problems can be simply solved with nutrition. Things I noticed during my 30 days: My brain started to work more quickly and efficiently, it just felt very sharp and fast! My energy was more consistent and stable. I barely drink coffee now, I find I just don't even crave it like I did. My skin looks healthier (though I still need to figure out what is causing my break outs. hormonal? Just need more time on the plan?). And I lost 10 lbs.  I want to lose a little bit more to feel more comfortable, so I am going to try Noom next. It seems pretty useful so far! Now that I have healthy eating under control, I think it is time to focus on exercise and caloric intake (I think I am eating too much salad dressing). Yay!

    Yes - hanging it from the oven racks is the new peak performance way.  Baking it laid flat is so 30,000 BC.  Or maybe reverse those two.

    This is a really good point, Erinj. 
    Tonight I made the most incredible meal. It was absolutely lush. So I took a photo of it and posted it on social media. Hardly deprived over here!LOL!
    Here's what I made if you are looking for something new. I shredded a head of purple cabbage, a head of green cabbage, and 4 carrots for the base. Now I have a giant bag of shredded veg to use as a base for more of this recipe or for others. I thought the raw shredded veg was pretty tasty to use in place of the regular salad greens too! I also added a a handful of cashews while I stir fried it and a hard boiled egg on top before serving too! Would also be great with spicy or teryaki chicken if you are not a seafood person.

    I haven't tried this one yet but I love pretty much anything by Paleo Running Momma! She's one of two go-to recipe creators for me!

    I use it for sure! every time I cook bacon I strain the fat and put it in a jar in the fridge. I also  save the fat from roasting chicken. Just put it in the fridge and scrap off all the lovely white fat after it separates from the juices and solidifies. Delish!
    Hot bacon fat drizzled on greens = amazing! or to use it to oven roast veggies. Mmmm. now i'm drooling

    Day 8 Sun June 9th
    Breakfast:  3 eggs, 1/2 avocado, franks red hot. Panfried creole potatoes in ghee.
     Lunch:Mixed green salad with cucumber, buffalo chicken, kalamata olives, cucumber, hard boiled egg, ranch dressing.
    Dinner: Sweet potato mash topped by spicy chicken and ranch dressing
    Day 9 Mon June 10th
    Breakfast:  3 eggs, 1/2 avocado, franks red hot. Panfried creole potatoes in ghee.
     Lunch:Mixed green salad with cucumber, buffalo chicken, kalamata olives, cucumber, hard boiled egg, ranch dressing.
    Dinner: Salad with shredded cabbage, carrot, spicy chicken, egg, coconut aminos, hot sauce
    Day 10 Tues Jun 11th
    Breakfast:  3 eggs, 1/2 avocado, franks red hot. Panfried creole potatoes in ghee.

    That's actually a really jerky thing to do. I can't quite understand why people feel the need to blatantly disrespect the way someone else is eating, especially if it's healthy and well founded. I find I'm very hard pressed to remain civil in situations like that. Well done you for not just cutting her down.

    I've found that it tends to be people who are insecure with their own food choices that need to sabotage others. They know  they eat too much crap, and either (1) want to change but don't feel they can, or (2) don't want to change but know they should. And getting others to eat the same crap they want to eat justifies their bad choices. Good for you for handling the situation!

    Unfortunately, it's true that not everyone will understand... and some who don't understand won't be willing to accept and respect your decision to do this. It really sucks that it's happened to you, but I'm so glad that you weren't actually tempted by what this person offered (that would've made it a little more difficult to handle it gracefully, I'm sure). I honestly think being able to shrug off temptations is a great way of showing them that you're not missing what they're craving, too.
    Do what's best for you, and if they can't handle that then they can pay attention to something else.

    Well, an unexpected benefit of this experience is that I am figuring out who I can trust. I just had someone I know try, 4 times in a row, to throw me off plan by offering me things she specifically knew I was avoiding. And then she basically tried to shame me by speaking derogatorily about what I am doing in front of mutual friends by calling Whole30 "That horrible thing you're doing". Which of course opened up a whole discussion I wasn't prepared or in the mood for, in public.   What the hell?!? I think I recovered and handled the explanation of what I am doing well but the wild thing is I am not even tempted by any of these things AT ALL. I feel satisfied on what I am eating to the point where I barely even have interest in coffee anymore! If you knew me, you'd realize that this is truly earth shattering news. lol! 
    I feel like some people are threatened by me mentioning that I am making some changes for my health. I am not saying they should or need to do what I am doing, I am just explaining what I am doing because it effects my scheduling. I need to eat at regular intervals, etc. Ugh! But the good news is I navigated both a saturday night party and a sunday opera outing with no problems.

    As long as the bacon is compliant, it is absolutely okay to use the fat to cook in.

    I use the bacon fat from compliant bacon to saute onions, potatoes and other vegetables (including kale) for my morning hash but I don't save it for later use.

    I often will let my bacon play double-duty by using the fat to help saute vegetables being included in the dish, so I wouldn't see anything wrong with saving it to use later. Obviously it's not something I'd use for every meal (just as I wouldn't use regular bacon grease all the time), but if it's compliant bacon then I'd assume the fat would be fine to use for cooking during Whole30.
    A mod may jump in and counter that, of course... but I'm from the south, so I'm as interested as you on this one
