We made the Japanese Gyoza, the Morrocan Chicken & Apricot bangers, coconut cauliflower rice, kickass ketchup, Cincinnati Chili (which I liked, but not as well as the Chocolate Chili from WF), and my personal favorite, the Stuffed Grape Leaves.

Be warned, the stuffed grape leaves are an epic PITA to make (I put on music and just kind of be-bopped my way through rolling up 60 bazillion grape leaves), but man are they good.  I ate them for breakfast for like, a week straight.  I made them with some ground turkey, which in hindsight was a mistake (they turned out a touch dry), but I ordered some lamb so that I can make them properly next go-round.  Flavor was amazing, though.

    I finished!

I'm down 11 pounds total, my muffin top is GONE, my skin is clear, and I'm sleeping amazingly well.

I took a bite of my husband's donut this morning and had to spit it out, it was so crazy sweet.  I'm thinking about starting another Whole30 tomorrow.  I feel so great, I'd like to keep it going.

I can't believe we're on the downslope!  I just had a big bowl of zucchini soup and a couple of tuna cakes for breakfast.

This is a little OT, but does anyone have any ideas about how to treat/prevent upper back pain?  I have a pain right at the base of my neck, between my shoulder blades.  It hurts to look up or down.  It loosens up over the day, but at night it stiffens up again.  I think my pillow is partially to blame.  Has anyone dealt with this before?

I'm going to make butternut squash soup today with all the bone broth I've been hording.    Hopefully I'll get a chance to make it to the gym, too.

I love lasagna.  Seriously.  I love it.  I can't even express to you how much I love it.  I have a lasagna recipe from my mother that I've labeled, "World's Best Lasagna," and it is.  Oh, it is.  I saw the recipe for macadamia nut "ricotta" in Nom Nom Paleo's cookbook and I plan on taking it for a test run at some point, along with some paleo noodles I found in Against All Grain.  That's for after my Whole30 though.

Right now, when I get bitten by the lasagna bug, I make the Italian Sausage and Eggplant strata from Well Fed.  It is CRAZY good, and does an incredible job replicating the mouthfeel of lasagna with the creamy eggplant and the eggs that act as the binder in the sauce.

I thinly slice eggplant and zucchini on my mandoline, salt them and let them sweat, then roast them off until brown in the oven.  Those do a GREAT job of subbing for noodles in layered casserole dishes like lasagna.

On the whole, though, I'm avoiding make paleo versions of things like pizza.  They're almost never (exception: the strata I mentioned above) as good as the original and thus, not worth the effort.

Oh, and I forgot to mention -- my wonderful husband brought me a present yesterday.  A Sodastream!  So now I get to make my own sparkling water instead of paying through the nose for Perrier or Gerolsteiner.

Cruising right along, in any case.

    Two weeks in today, hmm?

I've been quietly following this thread -- things have been incredibly busy with my cases.  I read the thread every day, I'm just not always in a position where I can comment.  I DID have a food dream the other night; I woke up thinking I had eaten half a bag of peanut m&ms and was upset with myself...until I realized that it was a dream.  :-D

Yesterday, I ate well.  I had a hardboiled egg topped with mayo and proscuitto preworkout, then M1 was lamb dolmas.  M2 was nomnompaleo's carrot and cardamom soup with shredded chicken mixed in, and M3 was shepherd's pie (ground beef topped with cauliflower) and green beans.  I had a late snack of hazelnuts and golden raisins when I was super hungry right before bed, which just leads me to believe that my M3 should've been bigger.  I'm having some bloating and stomach pain this morning, and I think that may be related to the nuts.

M1 this morning was lamb dolmas.  I may have some bulletproof coffee before I head off to work.  Since I'm in the Army, I have to work out every morning with my unit.  We were "zonked" from PT this morning (let go after formation, which means we scatter like roaches to our cars).  I came home and am now watching Frozen on HBO instead of working out.  :-p  Definitely have to try to work out this afternoon.

I hope everyone is doing well!

Ok, so mini-victory.  I was in court all day yesterday (as the prosecutor, not the defendant, don't worry) and even though my paralegals brought donuts for us to eat during breaks, I didn't touch a single one.  I also had them get me a plain salad with chicken from the deli, no dressing, no "fun stuff", for lunch when we ended up having to work all the way through lunch with only a short break.  I also didn't accept any of my co-counsel's reese's cups.

It was a rough case, too.  Awful facts.  So the fact that I didn't go home and go face down into a pizza and a bottle of wine is pretty darn cool!

Unnnngh I feel like I got hit by a truck.

I don't think it's the Whole30 (at least, not entirely); my little one has been having some serious sleep issues the past couple of days.  Really bad gas, I think.  I'm mostly formula feeding now, but we still breastfeed at night (I don't know how much she gets, it's mostly for comfort though she is getting a little).  I'd blame her gassiness on the change in my diet, but I don't think she's getting enough from me to impact her one way or the other.  Anyhoo, we had a rough night.

I feel bloated and gross.  Definitely need to drink more water.  Food is actually going fine, with no cravings or anything (I have a passing desire for a Diet Coke when I'm thirsty, but water/tea takes care of it).  I think I ate too much fruit yesterday (I had two apples, one each with lunch and dinner, plus a handful of coconut flakes while cooking) so I need to get the snacking under control.  Ah well.

Happy Day __!  (6 for me, but YMMV!)

Happy Day 5, for those of you on Day 5!

Blergh, I had a weigh-in this morning.  (For those of you not in the armed services, every so often your unit puts you on a scale to determine whether you exceed your alloted poundage for your particular height).  Spoiler alert, I exceeded my alloted weight by 11 pounds.  Unngh I feel chubby this morning.  Not a good way to start off my week!  I tried telling my boss that the 30-day program I'm on discourages weighing oneself...he didn't buy it.  :-D

At least that gave me good motivation for the program!  I had a big bowl of silken zucchini soup and five gyoza meatballs (pork and cabbage and water chestnuts and garlic and mmmm).  Feeling pretty good.  I'm also going to the lunchtime crossfit class today.  Whee!

Barefoot, that's me to a T.  I could eat an entire package of salami with sliced cheese, no issues.

I'm the heaviest I've ever been in my life right now.  Had my third baby six months ago, and I'm over 30 now, so I really shouldn't be surprised that it's harder to keep the scale where I want it...plus, with a sedentary, high-stress job, I haven't taken off much of the baby weight (and I put on way too much -- well over the 25-35 recommended).  I was a size 6/8 before I got pregnant, and now I'm having to hold my breath to squeeze into my size 12 jeans.  I'd be a little more zen about it if I wasn't in the Army -- they're going to want me back under my "table" weight here shortly.  That's probably 11 pounds from where I am.  :-p

My back has been really hurting recently.  I feel sore and creaky all the time, which makes working out difficult.  I was in great shape before I got pregnant (I've been paleo for about two years and an avid crossfitter), so I'd like to get to where it's comfortable to run again.  I miss LIKING to run.  I used to lace up my sneakers as a form of therapy, now I would much rather sit on the couch.  It's all part and parcel; I'm hoping getting my house in order on the food front will translate to more energy/less soreness/more motiviation on the gym front.

So that's why I'M doing this.  :-p  Now I'm off to make some rogan josh!

I spent all day cooking yesterday, and I plan to do the same today. Whee! The goal is to stuff my fridge and freezer with soup, bone broth, roasted veggies, meatballs, and pre-portioned slices of meat so I can grab and go. This is key for those days when I get home from work tired, cranky, and ready to go facefirst into a pizza.
Today's goal is hardboiled eggs and Rogan josh (well fed). I may also spatchcock a chicken. That's a fun word to type. It sounds vaguely dirty.
This morning I had two hardboiled eggs with mayo, stomach, and prosciutto, and a big bowl of silken gingered zucchini soup (well fed 2). It's very creamy and filing, but I found it a touch bland for me. I added salt and a hit of curry powder and it was awesome. If you're a big fan of the taste of zucchini, you may love it as is. I'm going to have meatball soup for lunch, and rogan josh for dinner. Or maybe a chicken. Who knows. It's sunday, the day is wide open. of course, the kids won't eat no matter what I give them, so there's that.
Hope everyone is having a great Whole30 day!
