    Yeah, I'm a convert too.  I read the recipe and was like "Gross!"    But doing the whole30 forced me to expand my horizons which was awesome.  Now that I'm done with my whole30, I still eat the cauliflower rice instead of normal rice.  I love it with meat and a sauce over it.

    "That was quite possibly the worst meal I ever made!"
     
    Exclaimed my mother when she _insisted_ that she cook dinner for a family gathering and wanted to do it 'whole 30' style because that was our latest 'fad'.  However, when I said 'whole foods', she took that to mean, no fat, no spices, no nothing.  I offered to cook.  I offered to go to a restaurant.  But no, she wanted to host everyone for a 'meal'.
     
    We had roasted pork loin with no seasoning on it.  Zucchini that was cooked to death and mashed sweet potatoes (which was the only edible thing.
     
    Then she added "I don't know how you stay on this diet!" as she broke out the Heath bar ice cream.
     
    My teeth were so sore from trying to chew the shoe leather pork loin that I refrained from commenting that it wasn't the diet, it was the chef!

    From a coworker who was sitting across from me drinking a Diet Coke and eating a teriyaki bowl that was 3/4 white rice and 1/4 tofu drenched in sugary teriyaki sauce, while I drank water and ate grilled steak and sautéed veggies:
     
    "You're lucky you're so naturally fit. I could be as skinny as you if I didn't have to work for it."
     
    (Hint: Everyone has to work for it!)

    So true - too many people do think that vegetarian or vegan diets are the healthiest!
    My first year as a vegan, I really was super healthy! Of course, I was eating all real food, gluten free, almost entirely grain free, no legumes, and tons and tons of veggies. So basically, nearly Whole30... minus the essential fat and protein and plus too many fruits and nuts. I think it's people who are successful (however temporarily) on a mostly raw, grain free vegan or vegetarian diet that make it seem like vegetarianism is a great idea.
    Then in my case, the lack of fat, lack of diversity of amino acids, and insufficiency of certain micronutrients caught up with me and I had a really hard second year of injuries, fatigue, and less than stellar health.
    Thankfully, as a chef, I already knew lots of good local farmers. While it was a tough decision ethically to stop being vegetarian/vegan, I had the resources available to do it right. When I transitioned back to eating meat, but before I told everyone, there were plenty of people who said I looked great - they called me glowing, energetic, more balanced. My skin was clearer. I had a bounce in my step again.
    I explained why and far too many people just didn't believe that adding (good quality, hormone free, properly raised, properly prepared) meat and eggs back into my diet was a reason for major improvements in health!

    Carla 1#/week is actually a great average, congrats!
    When I talk about the Whole30 program, I often get negative response from people who think it's too restrictive. Their answer to health and weight loss: Everything in moderation.
    I have two problems with this:
    1: Everything: Everything? Really? So a moderate amount of cocaine is alright? How about arsenic? Sure, these are obvious things, but there also are less obvious things. Bread in moderation doesn't work if you're sensitive to gluten. Milk in moderation doesn't work if you're lactose-intolerant. There are also MANY signs of inflamation that are much more subtle than all of this. And you don't know until you self-experiment. Eating everything in moderation won't teach you anything about your body.
    2. Moderation: There are no "guidelines" for moderation. If I eat sushi once a month, most people would say that's moderation. If I go to a restaurant once a month, that's still moderation. Same thing for candies, for baked good, cheeseburger, fries, chocolate, ice cream.. But if I add all these up, it's not moderation anymore. Nobody knows what "moderation" means to their body until they remove some foods from their diet, then reintroduce. Then again, we're back to W30/strict paleo.
    And just by the way, I've never seen anyone improve hormonal response, improve their digestion, their sleep, etc. just by eating everything in moderation. Health is NOT just about weight, people!
