    Oh. If you can use a rack (I use my cooling racks) inside the rimmed baking sheet, it helps the bacon keep from getting totally soaked in its own grease!

    I've baked bacon and the grease drips down into the pan ... ... and then I pour it out into a jar to save for cooking in!

    Thanks, missmary! I used to eat 2 eggs at breakfast, moving to 3 still seems like "a lot of food," so I don't feel like I need additional fat, but I wanted to be sure I wasn't short-changing myself by not adding one in at this point. Thank you for clarifying!

    Related to eggs (Physibeth - I'm impressed, I don't think I could balance that many eggs in my hands!): If eggs are your protein, do they also count towards your fat in a meal? I know the yolks have a bunch of fat in them, as well as protein / micronutrients, so I wonder. I typically eat 3 eggs and some vegetables (both sautéed in ghee or another cooking fat) for breakfast, but I wonder if I should be adding in another fat source as well. Thanks!

    Is ghee an acquired taste?

    I clarify my own from Kerrygold (or a local grass-fed butter, when I can find it). I don't know if I've ever gotten it to "ghee" status (which is, from what I've read, clarified butter that's further "cooked" until some browning occurs ... who knows if that is right), but I don't find it strong in either taste or smell.
