    Probably heading to Red Lobster for Father's Day and we were thinking about Snow Crab legs and maybe grilled shrimp. Eating out is tough!

    I made one last night. 2 minutes, flipped it over for another 90 seconds. It was perfect.

    So, the recipe said 12-15 minutes for a baked sweet potato. At around 9 minutes I heard the plate explode went into the kitchen and saw the potato completely engulfed in flames. It totally burned down to ashes. So how long should a sweet potato take?

    I've done every diet, tracked food, etc and this is quite different. My wife and our college age son did it, well are doing it. 2 days left! You can do it just be prepared to cook A LOT, and the meat is not cheap but think of all the money you'll save not eating out.

    I can't believe that next week I'll be taking my one year after pic to combine with my before. I was looking at pics from my friend's wedding last September when I had already lost about 30 lbs (and felt "thin"), and I look so different than I do now. Also fun that people are saying I look thinner now than at my wedding 6 yes ago, even though I'm the same weight (goes to show what more exercise and a Whole30 diet does to the body and how the same weight can look different based on what you're putting in your body) :-)
    Getting emotional about my 1 year anniversary of paleo/whole30 coming up. I think I may cry when I take my pics on July 1st. So blessed to have found and embraced this lifestyle.

    I'm 10 days away from being done and I wonder sometimes what that 31st day will be, but I think that will be the first day in a long time I'm going to really PLAN that day what I'll eat. It's either going to be cheese or a tortilla. 
     
    You did great, don't let day 31 slip into the rest of your life. Get back to basics and focus on the wonderful things you did over the past 30 days.

    Another option for cooking sweet potatoes is to roast them in your crock pot. Just put them in the crock pot with nothing else, don't even need to pierce the skin, set it on low for 8-10 hours. They are perfect and awesome.

    Some time get some raspberries and smash them up into a topping or kind of sauce and put that w/your sweet potato coins. Like a dessert.

    I make these http://nutritiousplate.com/2010/04/06/roasted-sweet-potatoes-coins/ every few days. I get a big sweet potato and after they're done cooking, I split it up into 2 or 3 baggies and eat those with my lunch.
     
    I can tell a major difference when I eat them and when I don't.
     
    Edited to add: I don't even like sweet potatoes and I will eat those. They are delicious!

    Thanks! I managed it again the next day thanks to lots of salad, roasted veggies and yet more streak. I've since been out to dinner with friends again and managed to get through that too, so I've earned my halo

    And, because we're cooking all the time we're now running the dishwasher twice a day. We've also had to buy more things like additional cutting boards, storage containers, some spices, etc. I don't think any week will be as expensive as the first one, but it's still expensive. But worth it!
