    Trying to eat through the fridge before we leave on holidays creates some...er....odd meals.
     
    Breakfast this morning:
     
    Bed of spinach
    Leftover grilled peppers & pineapple (note, the pineapple was SO tart when I cut it earlier this week that it was inedible.  Grilling it made it so sweet it was like candy!)
    Chopped up chicken breast tossed in a 50/50 mix of mayo & Frank's Red Hot

    I still use the old GT's bottles, have for like a year and a half now. I get fizz most of the time, I've never had a bottle explode (I've had some leak, but never all out explosion with breaking glass, and never the kind of pressure on opening where I ended up with booch on the ceiling either), and if I can't get a lid to loosen, I stick it in the fridge for a while and I can usually get it off then with minimal loss of booch. I keep thinking someday I'll get the swing top bottles, but I'm cheap, and these work, so I'm not too concerned.
     
    I will say, because I've had some bottles leak, I do set them down in a plastic cooler now until I move them to the fridge, just to contain the mess in an easy-to-clean area. I sometimes forget to burp them and I fill them a little fuller than I should and I leave them out at room temp for 2f for a lot longer than the usual 2-3 days, all of which probably contribute to the leaking, so you probably won't have any problems, but if you have a plastic box or cooler around, it's not a bad idea.

    Make sure you let it go at least 7 days, Jen, otherwise the full fermentation process hasn't taken place.

    Curry for breakfast today! the grilled chicken in curry sauce from the w30 book (oven baked not grilled). With green beans, cauli rice and cocoa toasted cauliflower. All leftovers, all delicious. I'm sad it's gone.

    I thought to post this shot of my breakfast prep this morning.  On the weekend I diced 5 bell peppers, 3# green beans, a bunch of steamed potatoes and some ham (note, the ham is not compliant but I am not on Whole30).  Now in the morning I just throw a handful of each into a frying pan with some fat, go blowdry my hair and pour a coffee and breakfast cooks itself.  Wash out one frying pan when the food has been plated and you're done!
     

     
    Note: the ham is non compliant but you could do the same with cooked chicken, cooked ground pork/beef, chopped roast, chopped pork chops etc.  Repeat, the ham is not compliant.

    2 pounds ground chicken (I use ground chicken thighs as it's moister...if you use ground breast, add some of the bacon fat for richness)
    1 pound bacon, diced and cooked until very crispy, then drained
    1 bunch cilantro chopped
    a handful of chives from the garden...or a couple scallions
    Salt, pepper, garlic powder, onion powder
    Form into patties...and then in that magical depression that you make in the middle of a burger to stop it turning into a baseball when you cook it? You jam a bunch of pickled jalapeños.  
     
    I would have preferred to mix the jalapeños into the burger meat but husband doesn't like spicy so I had to do it so that he could pick them out/off.
     
    I grilled the ones I have on hand right now but have also done them in the oven...on a rack placed on a cookie sheet and baked at 500F for 10-12 minutes.

    Chicken bacon jalapeno burger, greek salad (minus the feta, of course) & half avocado.  And lots of rock salt.  And coffee.

    Diced greek chicken thighs (made with this seasoning and grilled on the bbq last night)
    Diced precooked sweet potato, snow peas, orange pepper & a bunch of baby kale
    Dollop of mayo

    Oh, fun!  
     
    As it is currently Eight Billion Degrees here today, I thought I'd start off this morning with a salad.  And yes, I ate it out of a huge tupperware because as we always say, your salad needs to be huge and all my large bowls were busy.  Contained potatoes, olives, pickles, peppers, tomatoes, greens, cucumbers, a hunk of meatloaf and this dressing.

    Oh, fun!

    Oh, I love the idea of putting power greens in!  I love the silky gingered soup, no reason why not to cram a whole bunch more nutrient density into it!  Smart!
