Kb -I have read that adding a bit of sugar to your 2F will help with the fizz.  I have found that when I use candied ginger or tamarind my fizz is crazy, probably due to that added sugar.  You might could try that, I also find that if I leave it sit longer it will get fizzier too

I have been finding my batches are less and less fizzy over time, despite doing my continuous brew and the second ferment the same each time. Does SCOBY get old? I actually bought a new bottle of original GT to start a new SCOBY from scratch. Is there anything I can try before starting all over? More sugar or more tea when I add in my next sweet tea?
I miss my fizzy booch. Flat booch tastes, well, flat!

I DID IT! I GREW A SCOBY! Even messing up and using a black tea with orange oil in it, this baby still grew in about 6 days! I'm going to let it thicken up a bit more before I move it into my big jar, but wow, I'm so excited! It literally appeared overnight. I checked on it yesterday and there was nothing but a little blob of something floating at one side, then today it's a beautiful milky film almost covering the whole top! I covered the jar with paper towel and put it in the top shelf of my kitchen cabinet to keep it dark and warm. YAY!

I was so happy to discover my little scoby last night had completely covered over the top of my jar and is thickening up!  I think she's almost ready to go!  So excited.

Day three after bottling. It tastes legit! One thing that has helped is having some commercial kombucha on hand. I can compare mine. When I was testing from the gallon jar I thought it was vinegar. But compared to GT I could taste the sweet.

This is the next batch. Now that this helicopter parent has some bottles I'm content to leave the big one alone.

Earl grey?  I am wondering if that is the issue Meg, since we have seen a variety of opinions on whether or not that can be used for kombucha.

Make sure you rinse your hands with distilled vinegar before handling your scoby!  Happy brewing!  It really is a joy!

Oops one more hint, dont use earl grey tea. Its got oils and such that can kill or negatively modify the scoby. Black and green seem to work well together. My favorite flavor so far for second fermentationn: ginger ( loads of it), blueberry, mint, and st johns wart. But I also do continuous brew and drink it right outta the big ol jug. Yummy

Uses and Storing extra SCOBYs: they are great for facials. Sounds gross but results are worth the ick factor. Take all or some of a scoby, mush up ( technical term) and schmear on your face. Let sit for 15-30+ mins, you'll feel it feeding on the bacteria on your skin. Rinse off and voila, smooth soft skin. They are great to add to garden, compost, or in food.
Can store in liquid, just make sure they dont dry out, for months. And of course, passing them on is a great gift.
When brewing: clean vessels and utensils with white vinegar, NO SOAP. Distilled water for tea and dilution. If youre using metal lids during second fermentation, placing a bit of wax paper under metal lid helps. I started brewing a few months ago and LOVE the tea and the process.

    You can still add it!
Yesterday I bought a small booch bottle as I really needed it. Not a GT. My first reaction was - ewww, homebrew is so much better! I used to love this brand.
So many new brands appearing, crazy. All of them have spoons and spoons of sugar added, blergh.

    Good Sunday morning Booch brewers!

Last night I had my watermelon/lime/mint:

How do I describe this one?  It tasted nothing like any of the ingredients, but it was very good.  I have to say - this one really tasted like an alcoholic beverage of sorts!

I bottled some more yesterday; I am still keeping it pretty simple.

    dried cherries/vanilla
    Black cherry (another concentrate)/vanilla
Apricot/ginger (I should have added cardamom darn it!)
    and more gingerberry and trilogy.

Seriously loving walking passed the booch in the store!

OOh, just cracked open a bottle of ginger-cardamom-apricot. So pretty! So delicious!

These both were from my second second ferment attempt. Grating the ginger made a big difference in flavor (I'd just thrown in a hunk of fresh ginger in the first second ferments, and that did little to flavor them.)

I need to bottle my third batch today but I'm out of bottles! Will it work for me to use wider mouthed jars, or will that kill all the fizz? Any experience with this?

Meg, I don't know if this is helpful but, I keep mine in the second bathroom cabinet along with ferments. The cabinet stays closed. SCOBYs surprisingly are tough little boogers. It"s all gonna be fine, it will grow, they grow in a teacup of dirty water if you'd let them. It may take yours a bit more time for some reason or another, they are all individuals just like people. You have a good solid cover going now it just needs to thicken a bit. No worries and don't stress it sooo much, really it will get there. Big virtual hug

Lovely fizz and flavor from the blueberry concentrate, but it needed more ginger!

here is my second batch - this picture was taken as soon as I bottled them.  Today, they are so much more vibrant in color, especially the cherry ones.

    I have watermelon-lemon, 2 watermelon-cherry, cherry, and lemon-ginger.  cant wait to drink!

Tonight I FINALLY bottled the mango blackberry lime jalapeño! When I had leftover purée, I heated it and poured it over salmon. Quite good!
    I also made blueberry/ginger, raspberry/lemon/ginger and watermelon/lime/mint.
    Will keep you posted!
