    Lol KB..no worries. You can always bottle (to stop the vinegar process) and then flavor when you have time to shop for things.

    Derval brown stuff is to be expected. The goo is the yeast and brown is tannin from the tea. Dont clean it off like I did. Love that Lily is so involved. Do they do Show and Tell at her school? Some kids bring turtles..Lily can bring a SCOBY.

    Hey, y'all. Sorry I've been silent on this thread. It's hard to keep up with all the activity!
     
    Update: my homegrown SCOBY utterly failed. Guess I started with a bad bottle of GT. So I ordered one online and it's been going like gangbusters! I did my first bottling and second ferments over the weekend and drank my first bottle yesterday: strawberry vanilla lime. Mighty tasty but none too fizzy. It seems the sugar is the thing for fizz, right? Should I add a bit of sugar or honey to the second ferment or add more sugar to the first? Or bottle the second ferment sooner? Any of the above?
     
    Today I'll drink a blueberry ginger. Next bottling I'm trying apricot cardamom and cherry lime. We'll see what else I can come up with. I'm excited to taste my raspberry mint lime one, too. These suckers, especially once I figure out the fizz sitch, are better than cocktails!

    KB, remember Nadia's dad decided after 5 days that he liked it and was having it like that.  I waited one week, but it's your booch.  Taste when you want!
     
    Big news: hubby actually got himself a glass of booch today.  Just half a bottle of the raspberry, but he got of his own accord, with no offering from me.  He liked it.  I think it will take him awhile to get his head around the grossness of the SCOBYs but he hasn't completely lost his taste for it.  We bottled again tonight and he helped me (still no touching the SCOBYs).
     
    2nd piece of big news: strong tea fizz theory is looking good (though lots of sugar no doubt helped).  This batch I just bottled was about 4.5 litres (about 1.2 gallons) and I used 12 tea bags and about 300g sugar.  This stuff was fizzing like mad as we poured it into the bottles.  Next batch is 10 tea bags and 1.5 cups sugar. 
     
    Here is the fizz in the bigger bottle after it had a bit of time to settle (they all frothed over)

    I don't know whether to high-five Frankie or be disgusted with him.  He appears to be mating with his own baby (they are FUSED together now) while a new film grows all over them.  Ugh, maybe he is like Craster from Game of Thrones.  Your Nadia is going about this in a much more ladylike fashion.  As I should expect!

    Speaking of babies, I am proud to announce that Nadia (my SCOBY) is in her first trimester. She already has a layer forming at the top of my booch whilst she rests below. Such a proud moment!

    Exactly KB, but they all drink that and it's bad for them.  I vigilantly try to convert them, I got my bestie to drink a GT's Mango so am going to try her with one of my sweeter homemade ones......we'll see.  Creating Kombucha lovers one person at a time!

    When I explain to people what kombucha is and how the scoby works I liken it to yogurt (so mainstream!). I say that yogurt is made by certain strains of bacteria that eat the sugar in the milk and produce a byproduct that makes it taste tart. Then I say that kombucha uses a different bacteria (scoby) to eat the sugar out of sweet tea (also so mainstream, ESP in Texas) and leaves a tart byproduct. Anyone can understand that and get past the ick factor. It is amazing to me how many people don't realize that beer is fermented with yeast also- and that we have facilitated bacterial/yeast cultures for all sorts of foods and drink (uh, cheese? Sourdough? Pickles?)

    I couldnt resist trying my hibiscus and dried ginger that KK sent me so I took a plain bottle from the fridge and put 1/2 tsp of each. Oh my..hibiscus is amazing. Also..maybe because of third ferment overnight, fizzy like Mt. St Helens. The color after just 24 hours is amazing.

    A few little chunks of frozen mango and 5 days of 2nd fermentation =
     

     
    We had to open and quickly the close the lid a few times as the froth just kept coming.  And it doesn't even taste like mango!  But it's mega fizzy.  Think the lack of mango taste probably comes from not enough mango, along with the fact that I used frozen.  That's fine.  I'll take the fizz as a big win

    Well I haven't got my booch brewing yet but I froze two ice cube trays of strawberry puree for flavoring when I do.

    Btw, I was at the party last night. It was about fashion blahblah (look out for pictures of stunning Viktor&Rolf porclelain dolls). There was a corner if experimental designers. Guess what I see there?
    Everyone was grossed out. I was touching and smelling it. Designer was amazed and then I showed her my scobies on my phone. We were chatting about them forever and then I noticed faces of my friends who were waiting for me. Needless to say they are not aware if my yeast growing hobby. Haha
