    Day 60 is won and done!
    This round was fabulous.  Here are some of my NSVs:
    I took time to savor food, spending at least 20 minutes eating each meal.  Not rushing was good mentally, emotionally and physically.  It made me plan more, Stephen and talked even more and I truly enjoyed what I was eating. I tried a bunch of new recipes and loved everything I made (dump ranch, sheet pan dinners, amazing sauces).   I discovered the joy of roasted vegetables.   I feel so much clearer headed. I wake up happier and feel less distracted.  I can easily and succinctly explain why Whole30 (without being weird). I am more ambitious and am working to simplify my life (closets, schedule, life). Clothes fit better. My eyes are brighter and my face looks thinner. I have more confidence. I'm mindful of fiber and water intake. Stephen has adjusted his eating and drinking habits - he's not Whole30, but is making better choices how, when and what he eats and drinks. There are more, but that's a pretty good start with the major ones. 
    I'm going to do a reintroduction of sorts - NO eating all things like I've done within weeks or months of finishing every other W30. This will be introducing wine for 1 day, grains for 2 days and dairy for 2 days.  Our 25th wedding anniversary is March 7th and Stephen's made dinner reservations at our favorite restaurant.  It will be an elegant meal and I'd like to prepare my mind and body for a celebration that is wonderful - without going completely off the rails and ending up feeling terrible. 
    All of that being said, here's how today went down:
    B:  a hamburger with bbq sauce, celery, coffee with almond milk.
    L:  chicken, green beans with B/EVOO.

    Are you kidding me???? 60 days??? Whaattttt the heck??????? Boy, do we have some catching up to do!! Clearly, you are every bit the ROCKING IT 2018 star I thought you were.
    I need to go back and read all your daily inspirational quotes to get me revved up and ready to start again, SIBO style. I can't believe you've been doing this for 60 days.

    This forum is a lifesaver.  I relied on it for my first round and still do.  The accountability works.

    Great job on your first round!
    This is the ranch recipe I use, without the onion power  (for digestive reasons) and usually dried cilantro for the herb. It's super versatile - you can add jalapenos or anchovies or whatever your heart desires.

    I did like it, my husband did as well. I'd double it but use more flavorful broth for the gravy next time. And as noted, less mustard.
    Feeling good today, got a bit of the tiger blood back.

    Day 29
    Oh my gosh, I'm almost done with the main part. Learned to shoot a bow & arrow today, so that was super fun. I might get up super early tomorrow to see the Blue Super Blood Moon at, like 5am. Or I might not.
    Meal 1: 3 eggs w/potatoes scrambled in coconut oil
    Meal 2: chicken fried cauliflower rice
    Meal 3: chicken "enchilada" with spiced cauliflower rice (I might be eating too much cauliflower, need some more variety)
    Snacks: veggie chips (I am ignoring the newer chips rule, because reasons, if you missed that earlier post), rxbar (dinner was later because archery)
    Re-intro Plans
    I am ditching the "no added sugar" rule entirely come Day 31, mostly because I want to get an almond milk latte from Starbucks and eat my favorite flavor of Epic bar, which has bacon in it.
    I have celiac, so I won't be adding gluten containing grains back at all, so I'm separating out rice (I'm pretty positive I have zero issues with at least white rice, a gastroenterologist told me to not eat brown rice because my poor gut doesn't do well with it.), corn, and maybe oats/other stuff? I also want to re-intro soy and other legumes separately.
    Feb 1: Non-soy legumes
    Feb 4: Rice (which may be pointless since apparently I've eaten rice bran oil a couple times on accident, but a little rice bran oil and a whole chunk of rice are a bit different)
    Feb 7: Dairy. I fully expect that day to suck and have scheduled myself a work from home day just in case I end up on the toilet a lot. I love cheese, but I'm pretty sure cheese hates me. *sigh*
    Feb 10: Corn
    Feb 13: Soy
    Feb 16: Random gluten free grains not previously tested. Oats, quinoa, etc.

    Wow, this feels great!  This round has certainly been eye opening so far and I can't wait to see where the next 30 days take me (that sounds kind of Dr. Seussy. lol).

    B:  egg roll in a bowl, coffee with coconut milk.
    L:  turkey/beef taco meat in jicama tortillas with ranch.
    D:  beef sausage, roasted Brussels sprouts with ranch.

    Day 17
    Today was interesting. I was told by two separate people that my face looked thinner! (winner winner whole 30 chicken dinner!) I was then criticized for a 30 day eating regimen and told I should just give in and eat some real food again. Ummm pardon? I AM eating real food! That's the point. Both comments made me realize that this is actually working! 
    B: Apple/Pumpkin Bake / coffee/ dates
    L: Leftover taco / guac / shredded lettuce
    D: chicken breast on the bone, roasted veggies and potatoes / apple

    Day 29 is won and done.
    A great day and tried a new recipe that everyone's been raving about - egg roll in a bowl.  It was scrumptious.
    I've been taking collagen peptides for 9 days now and it could be coincidence, but I'm sleeping incredibly well.  Haven't really gotten awesome sleep since my first round so I'm loving this  - waking up refreshed and without the alarm.  
    Here's the day:
    B:  chicken and spinach sausage with sauerkraut, coffee with coconut milk.
    L:  taco meat on jicama tortillas with ranch, celery.
    D;  egg roll in a bowl, almonds.
    Fiber:  27

    Made a breakfast bake this morning: 
    1. Olive oil then thinly sliced overlapping potatoes (I used a mandolin) topped with a bit more EVOO, garlic salt and Herbes de Provence. Bake for 15 minutes. 2. A layer of  prosciutto then 6 eggs with S&P whisked and poured on top, then spinach and sliced tomatoes and a sprinke of cilantro. Bake for 15 more minutes or until eggs are set.

    Day 27 is won and done.
    I went to a baby shower this afternoon and it was great...not tempted by coffee, mini quiches, or cake.  Thankfully I ate about 30 minutes before going and then had a few grape tomatoes, cucumber slices and blueberries while there. 
    A few days ago a friend told me she's starting W30 soon and that she's going to eat as much as possible before then and asked if I did that before January 1st.  The answer was no, I didn't "eat all the things" - that there were very specific things I wanted and hadn't eaten for quite a while - a bagel with lox and cream cheese, a few potato chips, a Jimmy John's sub and a pour of Scotch - all of which I had over the course of about 2 weeks and felt like crap.  Having the flu probably contributed to how awful I felt in December, but those foods didn't control me and I realized life would be more than okay if I didn't have them.  It feels like I might finally be on the road to understanding Food Freedom.  
    I've decided to make this a W60.  I tossed the idea around before starting this one, thinking maybe a 2 day reprieve before the next round was something I'd want.  I don't.  I feel so good - clear headed and refreshed, am sleeping so well and just more in tune with my body that another month sounds great.  So here's to Whole60. 
    Here's the day:
    B:  chicken and spinach sausage with sauerkraut, coffee with coconut oil.

    Snack: grape tomatoes, blueberries, cucumber slices.

    Costco is the best!
    They have garlic stuffed olives which are AMAZING!
    Their low sodium bacon should be compliant (check first, obvs)
    Avocado oil, coconut oil, compliant sausage, high quality frozen broccoli
    Post-Whole30 their rotisserie chickens are probably the best deal in the store

    @Jager07 It's been a couple of years since I did this so I don't really remember how it felt. I am going to do a more extended re-intro. Since I have celiac, obviously not re-intro'ing gluten grains, so I'm going to test out rice and corn on separate days and probably do oats and quinoa and such later or as I feel like it. I think I'm also going to re-intro soy separately from other legumes.
