  3. CUCUMBERS IN VINEGAR - A nice side with veggies like yellow squash / green beans / tomatoes A classic Southern dish! Peel & slice 1 medium cucumber Heat 1/3 cup water in microwave about 30 seconds; stir in 3/4 tsp salt Add 1/3 cup White Vinegar - I like Modena Pour into a pretty bowl & add cucumbers. Refrigerate at least 15 min before serving. Will keep for several days in refrig. * Before serving, can add sweet onion / tomatoes / dill or other herbs
