My mom makes it with yellow summer squash, chicken & comino spice. I have lots of squash from my garden that I would like to use but need a recipe. Has anyone tried it on WHOLE30? nmp1338 Posted May 14, 2013 Share Posted May 14, 2013 I would suggest using your mom's recipe (those are the best) and not using anything that's not allowed (For example, corn). I found a recipe similar to the one my mom used, and made it whole30: 1 (2 1/2 to 3 lb) chicken, cut up 1/2 c. onion, chopped 1/2 c. green pepper, chopped 1 lg. tomato, chopped 2 tsp black peper 3 cloves garlic (minced) 1 tbsp. comino 1 tbsp. garlic powder 1 tbsp. sea salt 1-2 tbsp coconut oil 1-2 cups chicken broth 1 (8 oz) can tomato sauce 3 to 4 Mexican squash, cut in pieces, cubed (or any type of squash) Brown chicken in oil in skillet, then add chopped onion, green pepper, tomato & saute for a minute. Add spices to chicken and mix. Add cut up squash. Cover and simmer for 30 minutes. You can even make a side of Mexican cauliflower rice, using the similar spices for the "rice", such as garlic powder, comino, etc. Gosh that sounds good... I will have to make this again soon!
