Jinkse21
I have a grass-fed beef heart in my freezer that I would like to cook this week and wanted to check with my offal loving friends for any tried and true recipes for beef heart. I have never had it but I love chicken hearts so it couldn't be that different, right??
Nadia B
Lady M makes a stew with it. I made this post a while ago, maybe you'll find something useful. Report back what you end up doing with it. http://forum.whole9life.com/topic/8557-liverlove/page__pid__100738#entry100738

homerfrizzell
Another option for you is Beef Heart Tartare: http://www.thedailymeal.com/chris-cosentinos-beef-heart-tartare-puttanesca-style I've made it once so far and plan to make it again.
Nadia B
Haha Jinkse, always. I am on a spleen strike now, loving it but I think I should go and get some heart for dinner
Jinkse21
I found http://www.offalgood.com/ by Chris Cosentino who won Top Chef. Not a ton of recipes but a fun site to read through! I just realized the tartare recipe is one of his...is he the only Chef that cooks with offal???
homerfrizzell
He's one of the main ones. You should also check out Nose to Tail Eating by Fergus Henderson. There's also a blog based on someone's working their way through the recipes Nose to Tail at Home, I think it is.
MrsStick
Heart is awesome! I had reindeer heart in Finland...it wasn't stewed, but it was delicious. Most tender meat ever!
Nadia B
Nose to tail, yesss! It's awesome. Here is the blogger who is cooking heart away http://www.nosetotailathome.com/
SpinSpin
I love heart in chili and I have minced it and mixed it into meatballs and meatloaf--along with liver--YUM!!
Moderators LadyM Posted May 14, 2013 Moderators Share Posted May 14, 2013 I sliced it, grilled it, then tossed it in the crock pot with a can of tomatoes, some diced onion, a chopped sweet potato, a bunch of chili-like spices and let it go for at least a day on low. Then I added some coconut milk and ate it over cauli rice pilaf. Quite good, but my experience with heart is that it's very tough. In no way tender. Needs lots of cooking and even various types of cooking! Very curious about that tartare recipe. . . .
Beets
Yeah I sometimes cook chicken gizzards/bits for my dog and I've noticed the heart is pretty chewy.
Jinkse21
I love the chewy hearts but they are just too small so I was happy to find the beef heart...my dog and I will be very happy!
