joshbobb Posted May 13, 2013 Share Posted May 13, 2013 Hi everyone, I'm 1 week in on my Whole30 and have been making a lot of salad dressings (and sauces) in my Vitamix. It occurred to me that, instead of using pure oils to make it, I could try making it with the nuts (macadamia or cashew mainly) and water, instead of the oil, which is a refined food. Susan W Posted May 13, 2013 Share Posted May 13, 2013 Cold pressed olive oil is not refined and it isn't full of omega 6 like nuts are. I still like your idea though for a change in flavor. Susan W Posted May 13, 2013 Share Posted May 13, 2013 I just made this salad for the second time. It's a clone of Whole Foods kale salad which I love love. I added 2 TBS of cashews because I noticed in my favorite bag of kale chips from whole foods (it's the only reason I own the cashews is to clone their kale chips), the ingredients are similar to this dressing with cashews added to it. Beets Posted May 13, 2013 Share Posted May 13, 2013 I just found these instructions for cashew cream (as a dairy sub) while looking for inx for soaking cashews. http://paleospirit.c...w-cashew-cream/ Soaking will reduce the phytic acids in the nuts and therefore be less irritating to your gut. (I have mine soaking now. Hoping the soaking reduces nut bloating.) Which oils are you using? You want to be avoiding seed oils on your W30. moggle Posted May 15, 2013 Share Posted May 15, 2013 One of the tastiest things I have made EVER is cashew nut butter. Roasted (and cooled) cashews, a pinch of salt and a drizzle or two of coconut oil at the end to loosen it up (takes forever in my old food processor but it does get there eventually).
