Judy Villano
I always feel better with starting a plan on a Saturday since I work weekends. Any advice for packing lunches and keeping them interesting? I'm also not much of a breakfast eater- but lately I feel like I need something. Thanks everyone!
Jtandi
I am a leftover bringer...I've given up on interesting and have moved on to easy! I highly suggest breakfast within an hour of waking (like suggested in ISWF). I was NEVER a breakfast eater, now I eat breakfast every morning within the hour and it helps me set up my day for success and I feel amazing. YAY for you! megmac
Do you have a way to heat up your lunch? If so, I am a big fan of chili or meatballs for lunch. It's easy to make on your day off and reheats well. Bring some raw veggies for a side, and it's quick and filling. Johnny M's coconut curry meatballs are my favorite so far, and I've tried many. Meatloaf is another good one (also Johnny's) for lunch. If you can't heat, you'll have to bring a cool pack. My favorite cool lunch is tuna with olive oil mayo and tons of veggies. Sometimes I bring lettuce leaves and avocado and make a roll up. When I need a little extra flavor or crunch I chop up a few cashews and sprinkle them on top. Good luck! It can be a little overwhelming at first, but definitely gets easier.
Bluebiscuits
Chili, meatballs and stir fry are quick lunches I rely on heavily. It's also fun to bring deviled eggs and raw veggies with a home made mayo dip. It feels a biting cheating to me, eating "snacks" or appetizers for lunch. I'm not a big tuna fan but I found mixing it with homemade mayo and tons of veggies is really tasty. A chicken breast or a deconstructed burger and some sweet potato "chips", if I've got time to make it ahead of time is another option I rely on. donnagem
On our weekends we've been popping a huge pulled pork or roast lamb in the slow cooker which lasts us a few days of cold meat lunches (and some breakfasts too) and just pack a quick salad. My husband is lucky because he works from home but I am a teacher and need to be extra prepared. I also don't always get a lot of time for lunch and am often eating standing up so a little lunch box with salad and meat is quick, easy and keeps me more than filled up until dinner time. On days I'm slack I do salad and always have little cans of salmon handy. Good luck!
Judy Villano
I love your ideas! I think I'm going to have to grab a roast sometime soon. That sounds easiest. I am able to heat up my lunches, but heating up fish is frowned upon- since it stinks up the whole lunch room. LOL I did well today. breakfast was my coffee w/the homemade coconut creamer (coconut milk, coconut oil, vanilla extract and an egg whirled together and chilled). I had egg "cups" with spinach and onions, topped with real guacamole and a small sweet potato for lunch. I was full until dinner! I even survived a baby shower- just ate deviled eggs and from the veggie tray. Dinner was roasted balsamic glazed green beans and chicken sauteed with onions and raisins. So far, so good and I'm not hungry!! But, I am fighting the sugar dragon-- I was accustomed to dessert or chocolates after dinner. I can do this!
