habitualpurpose Posted July 4, 2012 Share Posted July 4, 2012 This is turning out to be my all time favorite chicken recipe. It soooo easy and is delicious (and my kiddos love it too). It's also good on top of a salad. (adapted from http://www.skinnytas...bo-chicken.html) Adobo Chicken Ingredients: 8 boneless, skinless chicken thighs on the bone (skin removed) 1/3 cup coconut aminos 1/3 cup apple cider vinegar 1 small head of garlic, crushed 6 ground peppercorns 4 bay leaves 1 jalapeño, chopped (optional) Directions: Marinate chicken in vinegar, coconut aminos, garlic, jalapeño and pepper, for at least an hour (overnight is ideal--though I've also done it with only marinating for 15 minutes and it was still great!) Add chicken, 1/2 cup water, bay leaves and marinade into a deep nonstick skillet and cook on medium-low heat. Cover and cook until the meat is tender, about 30 minutes. Remove the cover and cook an additional 10-15 minutes, until the sauce reduces. Discard bay leaves and serve. Link to comment Share on other sites More sharing options...
